I got a bag of frozen shrimp. I love fried rice, but would love something else... Any recipes?

    Shrimp tacos

    Sautee or grilled with lime juice, cilantro and garlic

    Black Pepper Shrimp

    Servings: 6 servings

    Ingredients:
    •3 lb fresh shrimp, unpeeled
    •8 tablespoon butter
    •3 tablespoon garlic, chopped
    •4 tablespoon freshly ground pepper

    Instructions:
    Preheat oven to 450 degrees.

    Wash and drain shrimp, and place in a shallow baking pan. In a saucepan, melt the butter, add the garlic, and saute for 3 to 4 minutes. Pour butter mixture over shrimp and toss to coat. Pepper shrimp until shrimp are well covered. Bake until pink, approximately 5 minutes, turn, bake a few minutes longer, and pepper again. You must use a heavy hand with the pepper.

    Serve shrimp with warm bread and salad

    If you don't have that much shrimp, just half or 1/3 the recipe

    What else do you put in shrimp tacos? I actually loved the ones I had once, just not sure what else to put in them.

    I love to sauté shrimp in just a bit of oil (any type) and then toss with a sauce made of 2 TBSP. light mayo, 1 TBSP. Thai chili sauce & 1-2 tsp. Sriracha. Served over a bed of chopped lettuce, red cabbage, and any other veggies (kale, onion, snow peas). It makes a super yummy salad!

    ETA: the amount for the sauce I described serves two easily. Forgot to add that detail!

    Shrimp Chili Rellenos Tacos

    Ingredients

    2 poblano peppers
    20 shrimp, peeled, deveined and marinated [Click here for Marinade recipe]
    1 cup Monterey Jack cheese, shredded
    4 small flour tortillas

    Directions

    Set 4 skewers in water to soak [Click here for a tip on soaking skewers]. Pre-heat grill to medium-high heat for 10 minutes. Marinate shrimp 10-15 minutes before ready to cook. Rub poblano peppers with a little vegetable oil. Poblanos should be left whole. Place poblanos on the grill. Grill for five minutes on each side on medium high heat. Remove poblanos and cover with plastic wrap. Thread 5 shrimp on each skewer. Grill shrimp for 4 minutes, 2 minutes a side. When poblanos are cool enough to touch, peel off the skin of poblanos. Cut poblanos in half from stem to tip, remove seeds, stem and veins being careful not to split open the sides of the pepper. Place a flour tortilla on a sheet of parchment paper, place a poblano half on top. Fill poblano with 5 shrimp and 1/4 cup of cheese, fold tortilla around poblano and wrap in parchment. Place 2 parchment wrapped tacos on a microwave safe plate. Microwave 45 seconds to 1 minute until cheese has melted and tortilla is soft and warm. Serve.


    Grilled Shrimp Nachos

    Serves 2 as a meal; 4 or more as a starter

    Ingredients

    18 Shrimp, peeled and deveined
    Olive oil
    Sazón (click here for recipe)
    1 onion, sliced into thick slices
    1 bell pepper or poblano pepper, deseed and cut into half or thirds
    Salt, to taste
    3 slices 2 % American cheese
    1 Tbsp. pickled jalapeno, minced
    3 Tbsp. reduced fat (1%) milk
    Tortilla chips

    Directions

    Soak skewers in salted water for 20 minutes (click here for a grilling tip). Preheat grill to medium-high heat. Drizzle shrimp with olive oil, sprinkle with Sazón and place on skewers.

    Rub onions and peppers with olive oil and season with salt. Place onions and peppers on the grill. Grill for 10 minutes; 5 minutes a side. Place shrimp on the grill. Grill for 4 minutes; 2 minutes a side. Quarter onions and slice peppers; add to a microwave safe bowl with cheese, jalapeno and milk. Microwave for 30 seconds, stir and microwave for another 30 seconds until cheese has melted into a sauce.

    Place tortillas on a platter, top with onion/peppers mixture and grilled shrimp. Enjoy!

    Ingredients

    For the stir-fry:
    2 Tbsp canola or vegetable oil, divided
    1 lb 26/30 shrimp, peeled and deveined
    1 tsp minced garlic
    1 tsp minced ginger
    8 oz ****ake mushrooms, sliced
    2 tsp white wine vinegar
    2/3 lb snow peas, trimmed
    8 oz can bamboo shoots, drained

    For the sauce:
    3 tsp oyster sauce
    2 tsp light soy sauce
    2 tsp sugar
    2 tsp cornstarch
    1/2 cup water
    1 tsp chicken bouillon

    Directions

    Be sure to prepare and gather all ingredients before you start cooking. Peeled and devein the shrimp. Prepare the snow peas; trim the ends and peel the edges (they are tough). In a small bowl, mix remaining oyster sauce, soy sauce, sugar, cornstarch, water and bouillon. Stir to combine and set aside.

    Heat up a large deep pan or wok over med-high heat. Add 2 tbsp of cooking oil. Wait until oil is very hot. Add shrimp, saute for about 2 minutes. Add the garlic and ginger stir-fry for 1 minute. Add the mushrooms; cook for a minute or so until the fragrant, then add the white wine vinegar.

    Add the snow peas and bamboo shoots, stir. Stir-fry with the vegetables until combined.

    Add the sauce mixture. Keep stirring. Do not overcook the snow peas. Remove from the heat when the sauce has thickened. Serve over cooked white or brown rice (optional).

    Ingredients

    1 Tbsp. olive oil
    1 large onion, chopped
    2 stalks celery, chopped
    28 oz. can whole tomatoes, crushed or diced
    3/4 tsp. Kosher salt, or to taste
    1/4 tsp. Black pepper, or to taste
    1/8 tsp. Red pepper flakes, or to taste
    1/2 tsp. Cajun seasoning, or to taste
    2 clove garlic, minced
    5 sprigs parsley, chopped
    2 sprigs thyme, leaves only
    1 bay leaf
    3 lbs. shrimp

    Directions

    Peel and devein the shrimp. Heat oil in saucepan, add onion and brown. Add tomatoes with juice and celery; cook 10 minutes, stirring thoroughly. Add all other ingredients except shrimp. Cook 10 min, then add shrimp. Cook 20 - 30 min. longer or until shrimp are cooked adding a little water if necessary. Cook covered on a low fire, stirring occasionally. Serve over steamed rice.

    Lemon Leek Prawns. serves one.

    1 leek washed and chopped into rounds 1-2cm
    prawns (raw or frozen..)
    Garlic - 1/2 tsp
    Ginger -1/2-1tsp
    Chilli- 1/2 red
    Coconut oil - 1/2 tsp

    Put leeks into steamer to cook. Next heat coconut oil and sautee garlic, giner and chilli slowly on low/med heat. 1 min. Add prawns to cook until nearly done added steamed leeks mix together and serve.

    There's a restaurant by me that makes shrimp tacos with shredded carrots and red cabbage with a garlic aioli sauce... they are soooo good! I think you really could put anything you want on them; even if you go old school (lettuce tomatoes and cheese) I think theyd be good too.
