Sugar Free Pumpkin Pie with or with out crust

Cooking Time 1 hour

Ingredients

1 (15oz) pure can pumpkin

1 (12oz) can Carnation Fat Free Evaporated Milk

5 large egg whites or 2 whole eggs

1/4 tsp salt

1 Tbsp pumpkin Pie spice or 1 tsp. cinnamon, 1/2 tsp nutmeg, 1/2 tsp cloves. ( I use more spices because I like them. I use 1tbsp cinnamon, 1 tsp nutmeg and 1/2 tsp cloves)

1-2 tsp Vanilla(I use Pure vanilla)

3/4 c. Splenda or 20 individual pkts.

Direction

Combine all ingredients and beat till smooth. Pour into Pie crust(I use Pillsbury pre-made)9 1/2 in glass plate. Bake 400 degrees for 15 min. Reduce heat to 325 degrees and continue baking for 45 min or untill knife come out clean

You can also do a crust less one just don’t use crust and pour mixture into lightly greased 9 1/2 in glass plate.

Enjoy it is Wonderful. I know you all know I don't like to use splenda. I have not found another subsitute to bake with. Still testing things. I only use it when making this :-)

    I use apple juice concentrate instead of the splenda. You can also make a crust with 1 Cup of graham cracker crumbs and 2 T of sugar free apple sauce. Mix and press into pan. Very simple.

    I wonder if you can use honey or agave without screwing up the consistency...
