Grown Up Grilled Cheese
I saw this recipe on the Today show a few weeks ago and LOVE it, so thought I would share.
2 C. Kale
3 Slices of Med Onion
1 Clove crushed garlic
Olive Oil Cooking Spray
1 slice of Cheese
Low calorie bread - 1 or 2 slices depending on our personal preferences.
Spray your pan with cooking spray and add the onions to caramelize, keep stirring them to prevent burning. Once the onion is caramelized, add the garlic and let it brown. Next add the kale and let it wilt, it will reduce in size quite a bit. Keep stirring to prevent burning. Once the kale is reduced by about half, pile the kale mixture on the bread, add cheese and place under the broiler for a few minutes until the cheese is melted. I prefer the sandwich with 1 slice of bread open faced, but if you want a 2 slice sandwich, split the kale between both pieces of bread and place half a slice of cheese on top of each and then put it together before you enjoy it. It is so delicious!

Those suggestions do sound good. I often will make this and use it to top or rather "stuff" a portobello mushroom burger. Delicious.0

Those look delicious! But....I don't think they are very friendly to my diet. Maybe when I get to maintenance I will have to try some of these recipes or maybe I can try to modify them!0
