Vegetarian Reuben

This could be made vegan by getting veganaise and adding some ketchup and capers/diced pickle relish.

So, I had a craving for something savory, so I made one of my fave sammies--a reuben. Technically it's a reuben wrap!

1 Flat-out wrap (100 cal, 9 gram protein, 8 g fiber)
1 serving tempe (140 cal, 16 g protein, 7 g fiber)
4 tbsp sauerkraut
1-2 tbsp lite 100 island dressing

I just cut the tempe into 10 pieces (each package has 2.5 servings), sprayed a pan, browned it on each side, added the kraut to warm it up, and filled a wrap. Paired with a spinach salad, yum!

I want another one but the sodium will be off the chart.

    This sounds really good, I'm not a huge tempeh fan, but I'll bet the funky flavor would be good on a reuben. Thanks for the friend request - I think we will get along just fine!

    That sounds so good! I had a vegetarian Reuben at a little cafe in a small town in Maine years ago, so good, I still remember it :)
