50 Calorie Cupcake, seriously delicious!

My son was having a birthday party and I wanted a somewhat low cal cake recipe so i could enjoy the treat too. In my quest, I found a recipe on line that I had to try and it was AMAZING.

1 Dry Cake mix - Vanilla Flavored
1 12 Oz. Can of Diet Orange Soda
2 Tlbs. Powdered Sugar

Mix the dry cake mix with the orange soda, reserving 1 tlbs of soda for the glaze. I made 48 mini cupcakes. Bake at 350 for about 12 minutes. Once they are done and cooled, top with a glaze made from the left over soda and powdered sugar (even this quantity made more than needed for the glaze). these were so good and come in at just under 50 calories each. All of the boys at my son's party went nuts for them too! 48 cupcakes gone in just a few minutes by a handful of lil guys. I have tried this recipe with other soda flavors too, another fav is Strawberry, cherry 7up and grape.

You can use regular flavor soda too, but I didn't want the extra calories.

***You do not need any eggs, oil or other ingredients for the cake, only the dry mix and the soda, give it a try I promise it is outstanding!!

    I thought the same thing so i had to run it through the recipe builder to be sure! The site I found it on (I wish I would have saved it!) had it as a cake, but I like portion control which is my I did mini cupcakes. :)

    The side had all sorts of combinations, but as I remember basically you can use any flavor cake mix with any flavor soda, the sky is the limit, you customize towards your taste preferences. Next I am trying chocolate fudge cake mix with diet cherry Pepsi.

    Add some frozen fruit if you want...
    frost with cool whip... I have made this many times.... somebody told me it was a weight watchers recipe...
