Good Low Carb Jambalaya Recipe.

If you like spicey, here's a great recipe.
Low Carb Jambalaya (From allrecipes.com)
Cook Time: 30 Minutes Ready In: 45 Minutes
Servings: 6
Ingredients:
1 tablespoon olive oil
1 tablespoon butter
1 large onion, diced
2 andouille sausage, halved lengthwise
and cut into 1/4-inch half-moons
6 cloves garlic, finely chopped
1 (14 ounce) can crushed tomatoes( I used a whole 28 ounce can, I liked the extra juice)
3 green bell peppers, seeded and diced
2 zucchinis, diced
2 tablespoons Cajun seasoning
1 teaspoon hot sauce, or to taste
1 cup chicken broth
1 pound chicken breast, cooked, cooled,
and chopped
1 pound cooked, peeled, and deveined
shrimp
Directions:
1. Heat olive oil and butter in a large saucepan over medium heat. Add the onion and andouille sausage and cook and stir until the onion starts to brown, about 10 minutes. Stir in garlic and cook until fragrant, 1 to 2 minutes.
2. Mix in crushed tomatoes, green bell peppers, zucchinis, Cajun seasoning, hot sauce, and chicken broth; bring mixture to a boil, reduce to a simmer, and cook uncovered until the liquid cooks off and the mixture is thick, about 15 minutes. Stir in chicken and shrimp and simmer until heated through, 1 to 2 minutes

That sounds like it would be good. But I would have to add at least a little rice. I know it kicks up the carbs, but it's not the same without it. The traditional stock to rice ratio is 1 1/2 to 1, so for this recipe it would be 2/3 cup of rice. I might try it with 1/3 cup brown rice and run the numbers. I could always go with smaller serving sizes. {sure I would} Now, thanks to you, I'm craving some good old Cajun cooking.0

Try finely chopping cauliflower and then microwaving it for about 1 minute. It's a better alternative to rice. it's semi crunchy and has a good texture and you do not have to deal with the carbs.0
