Goma Ae - my favorite spinach dish.

Typically, when I make spinach I make Goma Ae. Its a Japanese, cold side dish I particularily love.

Buy a bundle or two of spinach. Boil until wilted. This does not take long.
Drain, Squeeze out water, Chop up, Shape into small rounds. Like a meat ball but flatter.

Topping (these are rough estimates)
4 T seasame seeds. Crush in a mortar.
2 t of soy sauce
2 t of saki
3 t of mirin
2 t of sugar or sugar substitute
Mix into cruched seasame seeds to form a paste. Split over the top of each bundle.

Now I have a faster version of this when making it to pack for lunches.

Prepare a package of frozen spinach and drain well.
Toss the seasame seeds into the spinach and stir.
Mix up the liquid portion of the topping and pour over spinach.
Toss well and split up into portions.

I eat the goma ae and then I heat the rest of the container. Occassionally I eat the goma ae as a snack before lunch and then toss the rest in the microwave when lunch rolls around.

    I always wondered how this was made. It's one of my favourites when I go out for sushi. Definitely need to keep dental floss in my purse when I eat out and have this!

    My mother used to prepare this dish for me all the time as a kid. Super delicious and refreshing. Made me eat my veggies like mad. Thanks for bringing it up!
