I love food with FLAVOR and I love to cook, so simply eating a baked chicken breast or white fish fillet is just not an option.

Here's what I made for dinner tonight. I really wish I took a picture, but I was too hungry! I ate this with a cup of baked yams for a dinner that's under 500 calories. Eating it over a bed of mixed greens would have been good too.

Pan fried Citrus Salmon in a White Wine & Dill Sauce

1 t. extra virgin olive oil
1 clove garlic, chopped
1 Clementine orange (you will use the zest and the orange segments) Can substitute 1/2 regular orange if clementines are not in season.
1/2 pink grape fruit (juice 1/4 of grapefruit, cut 1/4 of grapefruit into segments)
1 t. dill weed, dried or fresh
Fresh ground black pepper, to taste
2 4oz. Salmon fillets, skin & fat removed
1/3 avacado (4 T.), sliced
1/4 cup white wine
Fresh parsley, chopped (garnish)


Grate zest of clementine orange
Juice 1/4 of a grapefruit, set aside.
Peel orange and 1/4 grapefruit, cut segments into bite sized pieces.
Saute garlic and zest of the clementine orange in the olive oil over medium heat until oil begins to bubble
Place salmon fillets in pan (skin and fat removed). Season with dill and pepper to taste.
Add white wine, juice of 1/4 grapefruit. Cook fillets for 3-4 minutes on each side while sauce reduces.
Add clementine and grapefruit quarters to pan until fruit is warmed, sauce has reduced and salmon is slightly browned.
Place salmon on plate, top with avacado slices and fresh parsley.
