So basically all I can think of is peanut butter.

I love to eat english muffins with a fried egg (no butter or oil in the pan though, I use non stick) and 2-3 slices of deli ham. It's a quick, protein-filled breakfast that keeps me full most of the morning.
Or I also like to mix a drizzle of honey in with my peanut butter and spread it on. They are also good with cream cheese and jelly, butter and jelly, just butter, peanut butter and jelly. Oh the possibilities are endless. English muffins are one of my favorites!0 -

cottage cheese and dash of honey, jiff whipped choc spread and strawberries, and almond butter with apricot jelly are how i dress up my english muffins.0

Chicken Breast
The last one makes a pretty fast lunch if you have frozen chicken. I toast the muffin and microwave the chicken, then assemble with a slice of american or provolone cheese.0 -
I usually toast mine and then top them with pizza sauce, shredded mozzarella, and whichever pizza toppings I'm in the mood for at the time (usually black olives). Then I bake them in a 350 degree oven for about 12 minutes. Delicious--plus it helps curb any pizza cravings that I might be experiencing.
Another way I like them is to toast them, then top them with tuna fish (mixed with a bit of miracle whip), followed by half a slice of american cheese. Again, bake them at 350 for 12 minutes and you have yummy open-faced tuna melts.0 -

Mini Pizzas.
I use them for open muffin grills... again much like a mini pizza LOL
Just with butter as a side for soup.

I like to make mini pizzas as some have already suggested, but what I really love to make is a tuna salad melt! So good! Kind of high in sodium, but lots of protein.
1 English Muffin, whatever kind you like (I use Aunt Millie's 100% Whole Grain)
1/2 Prepared Tuna salad mixture
1 oz. Shredded Cheddar
Toast the muffin. Then divide tuna salad & cheese evenly between halfs. Place on foil. Bake at 400 F for 10 mins. Devour! Makes 1 serving.
Calories: 249, Carbs 29, Fat 11, Protein 19, Sodium 1,025, Sugar 3
Tuna Salad Recipe:
- 2 oz. can Bumblebee Premium White Albacore Tuna in water, drained
- 1 tbsp. Hidden Valley Ranch Light dressing
- 1 tsp. Plochman's yellow mustard
- 1/2 celery stalk, diced
- 1 Meijer Kosher Baby Dill pickle, diced
- 1 tsp. Concord Foods Reconstituted lemon juice
Salt & pepper (optional)
Combine ingredients in a small bowl. Makes 2 servings.
Per Serving: Calories 79, Carbs 4, Fat 4, Protein 8, Sodium 595, Sugar 20 -
I love them with a mixture of tuna, corn and grated cheese, chucked under the grill until the cheese is melty and brown on top. Serve with salad, voila, easy tasty lunch.0
