So basically all I can think of is peanut butter.
I need more ideas of how to make my English Muffins more spectacular.
What can I add to my English muffins?
Well if your going to eat peanut butter then ditch the muffins and get crumpets, toasted, lathered in butter, doused in natural peanut butter, topped with fleur de sel. Keep the muffins for the less important times when you really don't care what you put on them.

English muffins make good pizza crusts (without all the work).

    Have you tried jam?

Melt some cheese onto them, then spread some Marmite on them!

I like to make mini pizzas as some have already suggested, but what I really love to make is a tuna salad melt! So good! Kind of high in sodium, but lots of protein. :)

1 English Muffin, whatever kind you like (I use Aunt Millie's 100% Whole Grain)
    1/2 Prepared Tuna salad mixture
    1 oz. Shredded Cheddar

Toast the muffin. Then divide tuna salad & cheese evenly between halfs. Place on foil. Bake at 400 F for 10 mins. Devour! Makes 1 serving.

    Tuna Salad Recipe:

    - 2 oz. can Bumblebee Premium White Albacore Tuna in water, drained
    - 1 tbsp. Hidden Valley Ranch Light dressing
    - 1 tsp. Plochman's yellow mustard
    - 1/2 celery stalk, diced
    - 1 Meijer Kosher Baby Dill pickle, diced
    - 1 tsp. Concord Foods Reconstituted lemon juice
    Salt & pepper (optional)

Combine ingredients in a small bowl. Makes 2 servings.

I love them with a mixture of tuna, corn and grated cheese, chucked under the grill until the cheese is melty and brown on top. Serve with salad, voila, easy tasty lunch.

My two favorites are, toasted with a poached egg topped with chia seeds. Or toasted with peanut butter, or bp2 and sliced banana.

As long as you toast them, anything on them. Everything on them!

Love mini-pizzas (some great recipes above)
Cheese and Worcestershire Sauce - also good with crumpets.
Faux McMuffin - toasted muffin, thin sausage patty, fried egg and slice of cheese. Ridiculously high in kcals (about 350kcal per muffin) but amazingly tasty.
Black pudding slice, fried egg and ketchup/chilli sauce.
    Tuna, mayo and cheese. Melt.
Under smoked salmon and scrambled eggs (best with wholemeal muffins)
    Under ham and scrambled eggs.
2-egg omelette, add chopped pickled onions. Serve between two muffins.

... Basically, if you can eat it warm, you can eat it in a muffin.
