What is your favorite healthy recipe?

Hey all,
My fiance is really bummed out that I want to decrease the amount of times that we go out to eat (we found out that a typical meal at the Outback is well over 2,000 calories by itself!). She really enjoys going out to eat, but we are both trying to lose weight here and we wouldn't mind saving a dime or two along the way.
I keep telling her that we can find some healthy recipes that are fun to cook at home and are tasty.
So what is your favorite healthy recipe? If you were going to cook a nice healthy dinner on Saturday night instead of going out to eat, what would you cook?

I like to make a nice lean crock pot roast w/ some carrots, celery and potatoes!

Take some of your favorite dishes you get when you eat out and slim them down and make them at home! Almost anything you can buy, you can make and make it heathier!
A fave of mine is taking a 100 calorie sandwich thin, grilling up a 94-6 hamburger patty, put a skrim of mayo with olive oil, a small handful of broccoli slaw and a dash of rice vinegar. then cook up some sweet potato fries and call it a beautiful meal! (more of a lunch thing)
I'm a steak or pork chop gal all the way for dinner. You'll save TONS of calories making steak at home, most steak houses douse the steak you order with clarified butter to give it a juicy look and fatty content! Grill up some steaks at home (season with kosher salt or sea salt and pepper and granulated garlic) skip the sauteed onions and have a big salad on teh side. Easy as pie!0 -
Wild salmon filet brushed with olive oil, sprinkled with lemon pepper and baked. Add brown rice and steamed veggies on the side! Yummy!0

Roasted veggies (with chopped garlic and onions)
Baked white fish with a little lite italian dressing and a sprinkle of panko
Crock pot split pea soup
Grilled salmon with a sesame ginger soy lite dressing

we ar huge fans of fajitia's steak or chicken and you can get whole wheat wraps or the 97% fat free ones...and the left over filling you can use the next with brown rice under it or as a stir fry...just be super easy on the cheese...I don't use cheese at all, which is hard for me because it is one of my weaknesses!0

I'll share one that we enjoyed last night:
Tacos! We used ground turkey, light sour cream, a little bit of shredded cheddar, and mild taco sauce. Two tacos was 375 calories. If you can do without the cheese, you can subtract 110 calories off of that (I needed some extra calories yesterday... was only able to get about 1,350 in for the day).
It's not the healthiest thing in the world, but I bet it's a solid 150-200 calories less than two of the tacos we normally eat. And if you substitute the hard shells for a wheat wrap or something, you can probably make it even better.0
