Turkey Meatloaf
Ingredients Amounts
Ground turkey 1 ½ pounds
Garlic, minced 2 cloves
Medium onion, chopped 1 each
Olive Oil or Vegetable Oil spray As needed
Fresh, whole grain bread crumbs ½ cup
Egg, large (or Egg Beaters) 1 each
Mrs. Dash (Extra Spicy or Chipotle) 1 Tbsp
Fresh parsley, chopped ½ cup
Ground cumin (or marjoram if preferred) 1 tsp
Dried thyme 1 tsp
Salt & Pepper To taste
Creole, spicy brown or Dijon mustard To taste
Method
1.
Preheat oven to 350°F.
2.
Spray a non-stick skillet with the cooking spray; sauté the onions and garlic over medium-high heat until translucent and slightly browned.
3.
Combine the turkey, onion/garlic mixture, bread crumbs, parsley, egg (or egg substitute), seasoning and spices in a large bowl.
4.
Season with salt and pepper.
5.
Place mixture in a 9x5x3 inch non-stick loaf pan, press down & smooth the top.
6.
Cover with foil and bake for 20 minutes.
7.
Remove foil and spread mustard over the loaf.
8.
Bake uncovered for another 35 minutes or until the meat is fully cooked.
9.
Remove from oven and let stand for 10 minutes.
10.
Remove from pan and serve.
