Another day of our education of the "150 Healthiest Foods on Earth". Woo Hoo! Some of these you won't be surprised by, some you will. I'll take one out of each food group each day to mix it up a bit. All information is from the book by jonny Bowden, Ph.D., C.N.S. "The 150 Healthiest Foods on Earth".

LENTILS:
Intro: Lentils are small, disk-shaped brown, reddish-orange, or brownish-green legumes that grow on an annual bushlike plant and are native to central asia. They're used throughout the Mediterranean region and the Middle East and are especially popular in India, where they're cooked to a puree and called dahl, an amazing-tasting lentil curry. The crisp Indian crackers called pappadams are made with lentil flour. In the nited States, lentils are often enjoyed in soup.
* Lentils are distinguished from beans in that they don't contain sulfur and therefore don't produce gas. So anyone wanting the beneftis of high fiber without the social unpleasantness associated with beans would do well to check out this cool little legume.
* Lentils are loaded with fiber, especially soluble fiber.
* Soluble fiber breaks down as it passes through the digestive tract, forming a gel that traps some subtances related to high cholesterol.
* Soluble fiber also helps control blood sugar by delaying the empyting of the stomach and retarding the entry of sugar into the bloodstream.
* Because fiber slows the digestion of foods, it can help blunt the sudden spikes in blood sugar and insulin that can cause you to be hungry again an hour after eating a low-fiber meal.
* Those constant spikes in blood sugar and insulin can also contribute to diabetes and can make weight very hard to take off.
* High-fiber diets also are associated with lower risks for cancer and heart disease.
* A cup of lentils contains a 18 g of protein
* A cup of lentils contains a whopping 16 g of fiber.
* Lentils are a terrific source of folate and a good source of at least seven minerals.
* One cup of lentils provides 37 percent of the Daily Value for iron and 49 percent of the Daily Value for manganese, an important trace mineral that's essential for growth, reproduction, wound healing, peak brain function, and the proper metabolism of sugars, insulin, and cholesterol.
WORTH KNOWING:
Unlike beans, lentils need no presoaking and are ready in 20 to 30 minutes. Brown and green lentils hold their shape well after cooking and are excellent for salads or other dishes where you want texture. Red lentils cook quicker and work best in purees and other dishes where softness is an advantage.
Unfortunately, the lentils used to make those delicious Indian dahls I mentioned earlier have had their outer skins removed, which lowers their nutritional value, especially the fiber content. they're still delicious, though, and they do still have some fiber left.

I love lentils but always see high calorie per servings on most recipes. When you say one cup 18 g protein is that cooked or uncooked? I will have to relook at these yummy things.0

the book didn't specify cooked, or uncooked. So good question. I would assume cooked. Anyone else know for sure?0

I've made a home-made veggie burger out of lentils (and some other ingredients) - delicious!! I LOVE lentils.

This isn't the recipe I used (don't have it handy) - but it looks easy. You can add in other veggies - mine had peas, shredded carrot, onion, etc. mashed into the mix, along with some walnut and it used wheat germ instead of bread crumbs.0 -

I know some people can even add lentils to muffins and baking. I have never tried it but this makes me want to look at the idea0
