Help! It's a cold kinda rainy day ( which we don't have often) & I want to bake!

Any low calorie recipes you can share? Cupcakes maybe?

I need to feed this sweet tooth without killing my calorie bank ;)

    1 cup oatmeal

    1 scoop of vanilla protein powder (you can use more if you like, I use a cup)

    Okay this is a "icecream" recipe but it's sweet and sooo good (and not too horrible calorie wise) so it might fit the bill.

    Not immediate gratification cuz you have to freeze some bananas but here it is:

    Peanutbutter banana icecream:
    makes 2 servings

    2 frozen bananas (i cut them up in thin chunks)
    2 tbsp peanutbutter
    optional topings etc

    You mix the fronzen banana chunks in a blender/food processor with a little water/milk until it has the consistancy of soft serve icecream. This take a WHILE with a blender because you have to keep scraping the sides down. It's a pain but worth it. Then mix in the peanutbutter. We add some pecans at the very end just to mix through. SO GOOD.

    A common trend I see in healthy baking is replacing oils and other "binding" ingredients with things like apple sauce, pumpkin puree, mashed bananas

    Also, cut back your sugar and consider alternative flours (ex: add a little almond flour for more protein)

    If you find a popular recipe on allrecipes.com or skinny taste, it is likely in the MFP database. Try searching "allrecipes banana bread" and just compare recipe to what you see. Could save you some time,over using the recipe builder.

    Gina on skinnytaste.com has lots of healthy recipes for baking. I have made dozens of things from the website, and every one was delicious.
  • Take one box of any kind of cake mix, mix it with 12 oz of diet soda, any flavor. Mix just those two ingredients and bake as directed on cake mix box. Be sure to use no calorie baking spray or it will stick though! Turns out just like a cake with all the other ingredients but without all the calories!

    Seconded! I LOVE LOVE LOVE her recipes.

    To be fair, she does do variations on a theme after reading the blog a while (i.e., figuring out a greek yogurt cheesecake...then varying it up into pumpkin, chocolate, etc.). But great place to start and get inspiration on alternatives to traditional white flour, butter, and egg ingredients in baking.

    For a lower calorie cupcake, just mix a cake mix with club soda or any sugar-free pop and bake. That cuts the calories of the cake in half. Then instead of a buttercream frosting, do a glaze.

    Consider purchasing ONE cupcake from a bakery and then driving home to eat it. You will not be tempted by the other cupcakes that do not exist. Does this work for others out there?

    you can get plain whey protein isolate that has no flavors or sweeteners, if that qualifies as a suitable substitute
