Healthy BEEF or BUFFALO recipes

I have yet to find a healthy recipe including BEEF. I am far from a vegetarian, i NEED red meat in my diet. Most diet recipes are either vegetarian or chicken. I don't eat poultry. Im kind of a picky eater which makes it hard for me to eat the healthy recipes thrown my way. Less vegetables the better as well ( i prefer raw vegetables). Ok so im not only picky, Im a pain in the you know what!! I just want something good w/ beef, or buffalo!

    Haha...thats what im talkin about!! My friend used to make me steaks that he would marinate w/ evo, salt, pepper and i think something else and then broil it. Oh it was sooo good!!! Of coure i would eat it w/ a side of mashed potatos, not so great to eat w/ meat but oh soo yummy!

    Typically I don't like beans, but I LOVE my chili. Total calories in the whole pot I think is 1539, I normally make 5 portions of it so just over 300 calories a portion and its a balanced meal. I have never tried Buffalo, but maybe it would make good chili, too?

    1 lb ground beef (85/15)
    1 can pinto beans
    2 medium tomatos (diced)
    1 small onion (chopped)
    1 jalepeno pepper (chopped small)
    salt, pepper, garlic powder, chili powder

    Season and brown beef. Add everything else and season again. Simmer (30 min or a couple hours), taste, season to taste. I end up using a lot of all the seasonings. Its so simple and so tasty. Let me know if you have any questions!

    If you're picky I would really suggest creating an account at papayahead,com (the last link) you can mark off foods you don't like and it will let you know if theres something in it you don't like before you even open the recipe. It's search method is great you can select the meal, cooking method, etc...

    You can exchange buffalo for anything that calls for beef. Venison is the same except generally you need a little more galic or onion to offset the gamey flavor. I've made a venison stew a couple times with a red wine base and it was out of this world- not sure what the calorie content was though...

    try haveing a baked potato instead (potatos are not bad for,idk why everyone thinks they are) i like mine plain with some salt but if you can't stand that try plain nonfat greek yogurt inplace of sour cream

    or if you want to go the mashed route try mashed califlower or a mix of potato and califlower and instead of mixing the butter in (if you MUST have some) put a little pad on top

    moussaka and shepards pie are a few of my favorite dishes...i love moussaka the custard topping is petter than dessert in my eyes and it actually not that bad....and you can add carrots and zuchini and stuff to the meat sauce to make it a bit better for you... here is the recipe i always use...(try spraying instead of coating with evoo) (i dont use the cheese or bread crumbs either)

    Everything sounds so yummy!

    I'm excited to try the venison that my BIL just got 2 weeks ago. I know I like deer summer sausage, but steaks or stew? We'll see.

    FYI Buffalo chili is actually pretty good! I'm not big on chili but add a little buffalo in it and it was AWESOME.

    Im not real big on venison, it's a little too gamey tasting for me. Oddly enough, though, i love black buck antelope! Its great meat, it grills and broils well. It's exotic game though so it's no easy to get. I don't think i've ever seen in it stores before. If anyone has every seen it in stores PLEASE let me know where!

    Oh and i LOVE potatoes! Whenever there's not much food in the house i just make me a potato.
