I'm a vegetarian and recently I've had to go back to cutting wheat out. I have a busy schedule so I'm looking for some yummy recipes. Thanks!

I don't have any recipes handy but some ideas are: soups, chili, asian rice noodle dishes, veg sushi, salads, spring rolls (the non-fried kind that use rice noodle wrappers), hummus, rice or polenta based entrees... Lots of options, hope this helps.0

I do lots of soup and veg sushi, salads, hummus, rice, tofu and such so I'm looking for some new things to eat. (:0

Foods magazine has a great recipe for lentil walnut burgers. My husband loves them. You wouldn't have to have them with buns. Could cut them in half and eat them with lettuce. I think if you google t, it would come up.
If you can find gluten free corn tortillas, you could do tacos. Try using red lentils to make the filling. They are less firm than brown ones and seem more like ground meat.
I also make a vegetarian spaghetti sauce for spaghetti squash with red lentils. Just add them to marinara sauce with an extra can of tomatoes (with the liquid). Simmer until thick
Veggie green curry. Simmer coconut milk with some jalapeño, fresh basil, and vegetable broth. Serve over steamed veggies and rice.
Red beans and rice. Lots of vegetarian recipes for it out there.
Mushroom risotto.
Curried lentils over cauliflower.

This probably goes without saying, but you can definitely check out Oh She Glows since most of her recipes are either GF or allow to GF substitutions. I think Edible Perspective also has a lot of GF recipes? I'm sure a quick google search for those blogs will yield the actual websites fairly easily.
If you have GF oats you can definitely do oat bars or grind your own oat flour for some muffins. Not exactly a meal but I do that for snacks. I suppose gluten-free snacks are a lot easier than meals! lol hope those sites help.0 -
Cauliflower "rice" as a stir-fry base (so add any veggies you want to the top). It's quick, easy, and delicious! :-) You can google/pinterest the "how-tos."0
