Easy Cabbage & Beef Casserole

Makes 6 servings for only 174 calories per serving! If you like cabbage rolls you will like this one! I put it on the food data as: Josie's Cabbage & beef casserole

EASY CABBAGE & BEEF CASSEROLE
1 sm. head cabbage
1 lb. lean ground beef
1 sm. onion, chopped
1/2 cup uncooked rice (instant)
1 can condensed tomato soup & 1 can water
3/4 cup diced canned tomatoes
Chop cabbage & place in greased baking dish (veg. spray). Put canned tomatoes on top evenly. Brown meat & onion. I put some italian seasoning, garlic powder & worshirester sauce on my meat while cooking. Pour over cabbage. Mix the soup & water together. Pour over entire casserole. Add more water if needed. Bake at 350 degrees for 1 hour. If you drain ground beef after cooking you reduce fat count. I used extra lean & did not drain it. You can also steam cabbage before putting into casserole & cut 1/2 hour off cooking time.

    oh god, thank you for posting this. i'm polish and grew up eating stuffed cabbage. love it, but it's such a pain in the butt to make, especially when i'm the only one in my family that will eat it. kids and husband won't touch it. :( this is so much easier, all the flavor, none of the hassle. Now if the ice would just clear off the roads so I could hit up the grocery store.... mmmmmm thanks again!!

    This sounds great. I noticed you didn't say when to add the rice. Could I just leave it out? I am low carb/low cal, and it's very hard to find a dish that is the best of both worlds. I grew up eating stuffed cabbage rolls and can't wait to make this. I just hope the cooked cabbage cooperates with my body!

    I have made a recipe similar to this. It is easy and really good. Roasting the cabbage gives it great flavor, it makes taste sweet. (I have noticed that a lot of things taste sweet since I cut back on desserts and other things loaded with sugar.)
    I used lean ground turkey and I did not use the rice when I made it. I served rice on the side for my kids. They asked for seconds!

    Just made this for lunch for 2 hungry teenagers and it is ssoooooooooo good. Like the idea of getting in all the veggies. I also added a apple chopped fine. Thanks so much.

    Ooo bump - although no idea what instant rice is lol. I guess I'll cook some and add it or add uncooked and more liquid.

    Instant rice is Minute Rice or some stores have different names for it.
