Looking for a low calorie, low fat chicken marinade.

    I use raspberry vinaigrette sometimes or I mix up low sodium soy sauce with some mirin and toasted sesame oil. Either way I usually slice the chicken into strips after it is cooked and serve it on a spinach salad with some orange slices.

    I make a low cal buffalo marinade:
    1 tsp cayenne
    1/2 tsp celery seeds
    Garlic powder or 2 cloves of garlic minced
    2 Tbsp apple cider vinegar (I'm sure regular is fine too)
    Salt opt
    Olive oil opt

    I use this on chicken drumsticks for my son and he likes it without added salt or oil just fine
    I also use it for chicken breast that I freeze for my husbands lunches.

    Low fat Italian dressing is always easy and yummy.

    I also make a good one, but don't know how good/bad it is. Olive oil, soy sauce, minced garlic, diced onion, ginger, red pepper flakes, lemon juice, honey. Mmm, great on the grill or pan seared.

    "Greek-style"

    1.5 TBS Olive Oil
    1 tsp minced garlic
    2 tsp dried oregano
    1/4 tsp sea salt
    1/2 tsp ground black pepper
    1 TBS lemon zest

    Covers 1 lb chicken easily.

    Another thing I like to do is pan sear chicken breast, then brush on dijon mustard and a little dried thyme. Afterward, roast in the oven at 425 for about 10-15 minutes.
