Late night eating issues?

I go to night school, 6-10 PM during the week. Usually I end up getting really hungry around 8:00. There's a Subway at the school, and I've tried eating salads there, but every time I do I seem to get diarrhea or stomachaches. I don't know if its the way they prep stuff or what. The sandwiches are okay, but I'm not crazy about them. Bringing outside food in is a no-no, so I can't bring food from home, just drinks.
So I've been bringing a gigantic water bottle and drinking it when I get hungry around eight, but it hasn't been killing the hunger pangs. This means I get home at 10:45-11:00 every night absolutely starving, and either end up eating junk food because I don't want to wake everyone up when they have work in the morning by cooking, with the microwave going off, or even just the clangs of pots and pans. I tried before and no one slept well, because everyone in my family is really light sleepers.
I'm not sure whether I should just keep trying to sleep on a really hungry stomach (as I've been trying to do) or if there's another answer for these hunger pangs that I'm not seeing. Help?

Most important, is meeting your calorie goals everyday. If you are hungry at 8pm and you have enough time to go to the Subway on campus, can you go to your car for a snack that you have packed ahead?
If not, maybe prepare something and put it in the fridge at home that is ready to eat like a salad with some chicken on top? Also making sure you eat well before you go to school (focus on your protein at the meal before classes) and this might help you not be ravenous after class.

I don't have a car, so I can't hide food in my car to eat at eight. I really don't have time to eat before school either, because I work until 5:30 and then have to bust my hump to get to school on time. (Yay bus.) I can try the refrigerator thing, but I don't know how well or if that will work, I can see if people wake up, I guess.0

If you can bring drinks in your own container then you could make a protein smoothie, or whatever you like, and bring it with you. I make one every morning to bring to work and use an insulated Kleen Kanteen tumbler. It keeps drinks cold or hot for many hours.0
