Help with healthy lunch and snack recipes please!

I have just looked through my diary and realize I have been using up my extra calories on unhealthy snacks. Consequently I have not lost as much weight this week as I would have liked and I know if I had of chosen some healthier snack options, or larger healthy lunch options I could have potentially lost more.

So here it is... I'm okay with breakfast. I normally have porridge or weet bix, and have recently found a breakfast smoothie recipe that is healthy and im going to start having one of those a couple of times a week too. I have 4 kids to organize in the morning so don't have time to make big elaborate breakfasts everyday.

Lunch time is my main problem. I have no idea what to eat for lunch!!! I think something larger, but healthy would be a great option and would prevent me from eating too many unhealthy snacks.

So I'd really appreciate you guys helping me with some healthy lunch and snack recipes and ideas!!

    I have a hard time with lunch too, because that's when I'm starting to get hungry but don't want to make something elaborate.

    Lunch:

    Veggie burgers are yummy, filling and fast. Morning Star is my favorite brand and they have tons of flavors (usually around 130 cals.) Put it on a slice of wheat bread, add some mustard, cheese, and whatever veggies I have on hand that day (sprouts are filling and only like 8 calories a cup) and it's delicious! If bread starts to feel a bit boring, I'll chop the veggie burger up and put it on a spinach tortilla and all the same ingredients.

    Fruit and veggie plate with some sort of protein like peanut butter is yummy and also helps with sweet cravings depending on the fruit you use. I will literally just chop up a bunch of fruit (like a banana, raspberries, grapes, kiwi) and some veggies (celery, carrots, cauliflower) and munch away. The peanut butter makes it filling for ME, you'd have to try it.

    Citrus salmon (just add lemon and/or orange zest, garlic, etc to your liking) with black beans (with lime) and quinoa on the side. I usually make it the night before so I don't have to rush.

    Snacks:

    My favorite snack right now is apple slices dipped in peanut butter. It sounds weird, but it's really good AND FILLING!

    Red pepper hummus with veggies or Original Organic Seed Crackers is super yummy and helps with chip cravings!

    Greek yogurt with granola and maybe some fruit! Sometimes I eat that for breakfast but sometimes I eat it as a snack when I'm trying to avoid eating something sweet and unhealthy.

    I'm sure I could think of more ideas if you want! I love just going in the kitchen and throwing random things together! :)

    Not to be mean, but you can eat unhealthy snacks or basically whatever you desire and still lose weight if you're in a deficit. Do you measure your food on a food scale?

    For some snack ideas

    1. Cottage cheese with frozen or fresh fruit. I like to put in mango and pineapple.
    2. Plain yogurt with fruit and granola
    3. Apple with peanut butter

    Lunch

    1. Salad with your favorite veggies, protein, and toppings.
    2. Soup and a sandwich
    3. Salmon and veggies

    Clean Eating Magazine (from the news stand) or Cleaneatingmag.com > sometimes the really good ideas are in the margins of the meal plans.

    In moderation, you can also work in sandwiches, either or half or whole depending on what they're made with. Soups, also in moderation due to sodium. Yes, you do have to make changes to succeed, but sometimes tweaks work too.

    Found this on pinterest. It is my new snack addiction. Freeze red seedless grapes. When you're ready to eat them, sprinkle a little sugar free jello powder on top and enjoy. It's so good and takes a little while to eat since it is so cold. I measure out 1 cup of grapes and place in Tupperware in the freezer so they are easy to grab and snack on.
  • One of my favorite lunches- egg salad sandwiches! Quick, easy, low cal.

    2 boiled eggs- 140 cal
    A spoon full of light mayo- 45 cal
    Whole wheat sandwich thins- 100 cal

    Too good to be true!
