Two of my "go to" vegan recipes are Curried Lentils, and Chickpea Soup. Both are tasty, hearty and easy to prepare. Let me know if they sound interesting and I'll post the recipies.0

One of my favorite breakfast recipes:
Apple cinnamon Steel Cut oats
1 cup oats
3 cups water
tsp cinnamon
tsp-tbsp ground flax seed
2 diced apples
1/4 cup brown sugar, OR several finely diced dates
Start it the night before in the slow cooker. 6-8 hours on low in the slow cooker
Add vanilla almond milk before serving if you like.0 -

Omit the shrimp or replace with tofu. I normally use a half and half mixture of the bean vermicelli and grated carrot.0 -
Here's a vegan version that replaces some of the noodle filler with grated carrot. I prefer bean vermicelli to rice vermicelli which is lower cal and has a little more protein.

Biiig veggie curries! Stir fry using rice noodles. Chilli using various types of beans and green lentils instead of mince. Pasta sauces made using plum tomatoes, chopped tomatoes, and coconut milk to taste.. Get creative! Take your favourite vegetarian or meaty meals and think about what you can use to replace the meat/cheese/egg. You can easily find substitutes online, for instance a mushy banana works great in cakes in replacement of eggs0

Here you go...
Here's the recipe for Curried Lentils. The quantities are all (very) approximate, but should give you the general idea.
Ingredients:
4 medium tomatoes, chopped, or one can of crushed tomatoes.
2 large onions, chopped in large pieces
1 medium carrot, sliced
5 cloves of garlic, sliced
1/3 bunch parsley, chopped
1 cup (dry) of soy chicken (optional)
1.5 cups lentils
3 cups water
2 tablespoon curry powder
Dash hot pepper flakes
Couple of healthy shakes of ground cinnamon
Pinch of salt
Couple of grinds of black pepper
2 slices of fresh ginger
Oil for sauteeing
Prodedure:
Saute the onions and ginger until onions start to brown, add the garlic toward the end
Add everything else, except the parsley
Bring to a boil, then simmer covered over a low flame, stirring from time to time.
Cook about 25 minutes, or until most of the liquid is absorbed. Once you turn off the flame, stir in the parsley.
Remove ginger pieces
Variations: Can also add 2 small cubed potatoes.0 -

The chick pea soup recipe goes something like this...
1 large carrot
1 stalk of celery including the leaves
1 healthy thumb and forefinger's worth of fresh parsley
1 medium onion
3 cloves of garlic
2 cans of chick peas
2 small packages of tomato paste
3-4 tablespoons of hummus
salt
black pepper
curry powder
cinnamon
olive oil
Chop carrot, celery, parsley, onion & garlic
Saute all of the above for 2 minutes or so in a little olive oil, adding the garlic at the very end. I saute them in the soup pot itself
Add water until the pot (2 qt) is mostly full
Add 1 can of chick peas (drained and rinsed)
Add tomato paste
Add healthy pinch of salt
Add 5-6 turns of fresh black pepper
Add curry powder (about 1 tablespoon)
Add a significant shake of cinnamon
Cover bring to a boil, then lower heat and simmer about 30 minutes.
Remove from heat
Blend with immersion blender until it reaches the desired consistency
Add the hummus and stir well until it's completely dissolved (add more if you want a creamier soup)
Taste, and re-season if needed.
Add the second can of rinsed and drained chickpeas.

I eat a lot of south Asian cuisine. If you like spicy it's perfect. Even the chapatis made with whole wheat flour and water have a significant amount of protein.
There is an app called the 21 day vegan challenge. It has recipes and daily food plans. I like it for the curried lentil cous cous soup. We eat that all the time.
I have learned how to make seitan with ginger, thyme and garlic, braggs and nutritional yeast flakes.
I also make a creamy cashew sauce for pasta which is very rich.
Find a lentil or lentil - nut loaf that you like online, these are great in sandwiches with veggies.0 -

Vegan banana ice cream is good. It's just a banana, frozen and then put in a food processor until it is creamy like soft scoop ice cream. You can add other things to it, like peanut butter, raspberries, cocoa powder, etc.0

I just made Veggie Tofu Salad. It was yummy and I couldnt finish it.
2 oz tofu, 1/2 avocado, 1 bell pepper, 1 small zucchini, 1/2 cup cauliflower. dice veggies, mash tofu & avocados add seasoning of choice.. I used taco seasoning. mix well together. 268 calories 13 grams fat, 20 carbs, 9 Proteins A bit high in fat but its better than using vegan mayo as a binder. .. It would be good with a few dill pickles, dash of tumeric, salt pepper for more like an Egg Salad.0 -
