Vegetarian recipes
I have decided to go down the route of being a vegetarian. I will defiantly not be vegan, i love dairy products to much! Maybe down the road i could try it, i know people that say it gets easier as it goes on. But anyways i digress. Back to the main question, does anyone have some suggestions of good vegetarian recipes or foods that are healthy but yummy? thanks! (:

Quinoa Stuffed Peppers are pretty good. They freeze well too, so I make a large batch and freeze the leftovers.

I use just 1 cup of cheese vs the 1.5 cup the recipe suggests. I also used fresh raw organic spinach vs frozen. I added it to my recipes, and it came out to:
1 serving (one stuffed pepper half)
Calories: 229
Carbs: 27
Fat: 9
Protein: 10
Sodium: 176
Sugar: 40 -
I've become a "mostly vegetarian". Found Google to be a great friend. 3 veggie dishes that my family has loved so far (even though they aren't joining me on the veggie craze yet).

My 10-year old son now wants me to make the chickpeas recipe every day. Plus, if he loves the homemade hummus. It has now replaced his former love of potato chips and dip. Instead of potato chips, I tear up a pita bread into chip-size pieces, put a little olive oil on both sides, and bake them for 10 minutes.
Bottom line is think about the stuff you like. Type it into Google preceded by the word "recipe". And you will get tons of healthy hits. Or alternatively, simply type in something like "vegetarian recipes on a budget", "crock pot vegetarian recipes", "easy vegetarian recipes", etc. etc.0 -

We try to eat vegetarian suppers a few times a week.
Our go to dinners are:
- black bean burritos
- Tofurky chorizo tostadas
- quiches
- lentils (google ethiopian recipes... SOOO GOOOD)
- vegetarian chilis
- nachos (obviously make them healthier by using yogurt instead of sour cream, light cheese, multigrain chips or sweet potato chips)0 -
