Diabetic Cookies?

Hi guys! Christmas is upon us and I wanted to make my mom some cookies or candy and send them to her. The trouble is she's diabetic. Do any of you guys know any great recipes for diabetic sweets (preferably ones you've tried yourself and taste good). I don't want her to feel deprived this holiday season so I want the sweets I make for her to taste *hopefully* just as good as the kinds that everyone else gets to munch on.
Anyway, if you could post your recipes or links to ones you've tried that would be AWESOME!

My husband is diabetic and I do low carb and I LOVE these cookies:
Magical Peanut Butter Cookies
1 cup splenda granulated (I use the kind with added fiber, because who doesnt need extra fiber?)
1 cup peanut butter (I use crunchy to give it extra texture, but either kind works)
1 egg (or 1/4 cup egg beaters to save calories and cholesterol)
Mix all together and form into balls, I make mine slightly smaller than a golf ball. Arrange on baking sheet and press flat in criss cross shape with a fork. Bake 8-10 minutes, depending on whether you like chewy or crisp cookies.

Number of servings approx. 12
Ingredients Calories Carbs Fiber Fat Protein
Splenda - Gradulated Sugar W/Fiber, 48 Tsp 0 48 48 0 0
Winn Dixie - Crunchy Peanut Butter, 16 Tbsp 1,600 56 16 128 64
Egglands Best - Extra Large Eggs, 1 egg 80 0 0 5 7
Total: 1680 104 64 133 71
Per Serving: 140 9 5 11 60 -

Don't know of any recipes Stacy but if you ever want to buy her Sugar Free desserts and stuff I highly recommend the Balboa Sugar Free cakes and stuff which are offered on QVC. They are tasty and yummy. Hope you find what you are looking for!0

Thanks! I appreciate that. I went to Trader Joe's today and tried to find at least SOMETHING treat-like that was sugar free - I even talked to an employee who then talked to another employee to try and find something sweet and sugar free. But even Trader Joe's - a supposed great place to find healthier foods - only had ONE sugar free sweet. I was like - WTF? With more and more people getting Diabetes every year why is it that it's still next to impossible to find diabetic friendly foods?
On the plus side what he did find us was great - it's sugar free chocolate covered almonds. Very Yummy! I highly recommend them!0
