8 oz Pasta - any kind
1 lb Meat - any kind (sausage (sliced), chicken or turkey chopped, sirloin chopped)
1 cup cheese - any kind
bell pepper, onion, jalapeno, heck even celery
spices - any kind (Italian, oregano, rosemary, thyme....
Throw it in the pot and cook it up0 -
Easy Chili
1.0 container (500 g (1/2 cup) ea.), Extra Lean Ground Beef (Can substitute with lean ground chicken or ground soy)
15.0 oz, Beans - Kidney, canned
2.0 cup(s), Medium Salsa
1.0 cup(s), Corn - Sweet, yellow, frozen, kernels cut off cob, unprepared
2.0 tbsp(s), Chili Powder
2.0 tsp(s), Lime juice - Raw
1.0 tsp(s), Ground Cumin
0.25 cup(s), Ff Sour Cream
Made this dish this weekend. So quick I was done in 15 minutes. Very tasty too.
Brown meat, then throw everything in (except sour cream). Let simmer for 15 minutes then enjoy with a dolop of sour cream. Serves 4.0 -
I've been using recipes from Skinny Taste dot com. One of my favorites is the Crock Pot Sante Fe Chicken. I've tried numerous recipes and they've all been great so far. You can find crock pot and casserole recipes (and many others, but I'm goin for the one pot concept) and all of the nutritional info is included. I've also found that when I go to my food log, someone has already put the recipe into the database, so it's easy to record. Hope this helps!0

My favorite is my Shepherd's pie... I'm just still not so good at figuring out the quantities I need. You asked for chicken, but you can use lean ground beef so it's not that bad...
About 7-8 potatoes
1/2 cup of milk
About half a bag of frozen mixed veggies (usually I use peas and carrots)
1.5-2 lb of lean ground beef
A small onion
A small can of plain tomato sauce
Reduced fat shredded Swiss cheese (optional)
Salt, pepper etc
Brown the beef in a skillet with onions, then add the tomato sauce and let simmer until the extra liquid is gone. Layer on the bottom of a pan (9x13 is what I use). Layer frozen veggies on top. Boil the potatoes, mash them with the milk (or whatever you like in mashed potatoes really), then spread on top. Add the cheese. Bake at 400 for 20 minutes, or until the top if a bit browned and cheese is crispy.
It's delicious but calories vary depending on quantities. Last time I went heavy on the mashed potatoes and a serving (1/8th) was 430 calories or something... can definitely lighten it up.0 -

Just made this Sunday for my lunches this week. Yummy!
Ingredients
•1 1/2 cup cooked brown rice
•1 large onion, sliced
•4 medium carrots, grated
•1 small head cauliflower (sliced/chopped)
•1 pound lean ground beef (uncooked)
•1 medium green pepper, diced
•2 teaspoons salt
•2 cups tomato tomato sauce
•2 tablespoons Worcestershire sauce
•1/2 teaspoon dried basil
•1 cup shredded cheese of choice (I used a 4 cheese blend with 80 cals per 1/2 cup)
Directions
•In a greased 13-in. x 9-in. baking dish, layer rice, onion, carrots, cauliflower
beef and green pepper. Sprinkle with salt. Combine the tomato sauce,
Worcestershire sauce and basil; pour over the top. Sprinkle with
cheese. Cover and bake at 350° for about an 1 hours.
I split this up to 5 servings and it came to 376 cals each. I'm sure you could cook the ground beef first and drain to get rid of some of the fat, just lessen the cook time a bit then.0 -
Whole-Wheat Chili-Mac

Ingredients
12 oz uncooked lean ground turkey (with 7% fat)
1 medium onion(s) chopped
14 1/2 oz canned stewed tomatoes Mexican-style, undrained
1 1/4 cup(s) canned tomato sauce
2 Tbsp canned green chili peppers diced, drained
2 tsp chili powder
1 tsp Durkee ground cumin or other brand
1 cup(s) dry whole-wheat elbow macaroni
15 oz canned kidney beans rinsed and drained
Directions
In a large skillet, cook turkey and onion until meat is browned, about 10 minutes; drain off fat. Stir in undrained stewed tomatoes, tomato sauce, chili peppers, chili powder and cumin; bring to a boil.
Stir in uncooked macaroni and kidney beans. Return to a boil, reduce heat, cover and simmer until macaroni is tender, about 15 minutes. Yields about 1 1/4 cups per serving.
Serve with grated parmesan topping, fat-free sour cream and low-fat or fat-free shredded Mexican cheese, if desired (could affect PointsPlus values).
