Using white or black beans to replace flour

I heard recently that you can substitute boiled and pureed black or white beans for flour. One cup of flour equals one cup of white or black beans plus two tablespoons of fat.

Does anyone have any luck on this? Any recipes that you know work? Does this work in any recipe or only in certain types of recipes? I made black bean brownies a couple weeks ago and my kids gobbled them down and still ask me for more brownies - they had no idea it had beans in it (they won't eat beans on their own).

Also - I was reading about using stevia or truvia in place of sugar in recipes, but there are issues with stevia being so much sweeter than sugar, and so I need to add some kind of filler to equal the same bulk as the sugar would be. So - I was wondering if I could just add my stevia into the beans - maybe add some extra beans to replace some of the bulk from the flour? I don't like buying the premade for baking stevia blends because of the other crap in there.

Anyways - any recipes or ideas would be greatly appreciated!

    Never use the stuff, I use whole wheat flour in in my baking and agave nectar or brown sugar, as I do not like the taste of stevia.
  • I can't have whole wheat flour :( I wish I could - would be so delicious! But I also can't have white rice flour or potato starch - so that takes out pretty much any premade gluten free mixes and difficult to find things to bake with
    I love agave syrup - but try to stay away from it for the most part because it is pretty much fully fructose and a bit of glucose. I sometimes use barley malt syrup - but not the best taste to bake with and that leaves stevia or truvia, but you do have to get used to the taste... :( I just end up eating foods that are not as sweetened so I don't get that bitter taste - probably better in the long run!

    I've made black bean brownies. They tasted pretty good, and definitely satisfied my brownie craving, but whatever you decide to make with beans, eat it in moderation, at least at first. I say this because the brownies were low cal, and so I ate the entire pan. It was delicious, but the next day I was blowing toxic fumes all day long. So just beware :)

    I've been looking for a bean pie crust recipe. Now I am starting a Pinterest board on cooking with beans. What I have found is 1 cup beans for 1 cup flour and 1 Tbsp Stevia to 1 cup sugar.

    I also found using ground beans to replace flour. I am going to look into that.
