St. Patricks Day, Salad for Dinner--Ideas??

Hey everyone! So I'm brand new to this site, and I was hoping that I could get some dinner ideas for a "St. Patrick's Day" themed salad. My boyfriend and I are making dinner, and we are both trying to eat healthier, and decided to do a nice salad; however, since it's St. Patricks Day, I would really love to make it themed, but healthy at the same time. So, does anyone have any ideas or recipes that they would like to share???

    Maybe make it all green? Lettuce, kale, sugar snap peas, cucumber, avocado, cilantro (kinda like little shamrocks....kinda), broccoli and slices of kiwi?

    For dessert, sugar free green jello!
