Broadening Your Taste Palette

I have been changing my eating habits since around January 10th and I have been exploring various vegetables that I had never tried before with incredible simple recipes.

I finally baked a spaghetti squash last night. I ate it with some olive oil, garlic and salt/pepper then today I added a meat sauce and portablello mushrooms.

Incredible taste. Part of making life changes is trying something new and my changes in what I eat and portions are really helping me. No I haven't loss a ton of weight but I am losing steadily. I am also doing lifting and building lean muscle. I used to be an athlete and still consider myself to be one. Now to just look like one again!

Loving all my nutritional and physical changes.... One pound at a time!

I've started roasting vegetables. They're fantastic. Drizzle a little olive oil, some crushed black pepper and sea salt ... or my favorite I use on everything, lemon pepper. roast at about 425 for 15 or 20 minutes. to die for!! any combination is wonderful. I bought a pizza pan that is a combination of cast iron and ceramic and it is fantastic for roasting. For the money I've saved by not buying "junk" everytime I stop for gas, or at the convenience store, or grocery shop, I can easily buy the good things when I grocery shop. When I think of the money I spent on junk/crap over the years, it's mind boggling. I also buy lots of berries now. I just figure ... why not? I'm worth it !!

I've been trying some of the veggies that I haven't liked in the past by fixing them in different ways as well. I love frozen banana slices! I lay the individual slices on a pie pan and put in the freezer overnight. Next day I put them into a freezer bag (this way they aren't frozen into 1 huge lump). It's a yummy but healthy treat.

Im glad your finding nice alternatives that you actually enjoy. Thats probably the biggest key to success, imo. Those who just haze themselves, and eat bland garbage, will inevitably fail.

    give this a shot

add diced tomatoes and green chilis (look at the critical reviews)

goes great with a nice big chicken breast.

I like to get weirdo veggies I've never/rarely used before. I've had fun with celeriac (chips and mash), and aim to get some parsnips to play with, as I've only used it in stock once, and discarded it. Spaghetti squash is also one I'm ashamed I havent tried. I bought some jicama and planned to eat it with hummus, but I must have eaten it after a night of boozing! I don't remember what it was like :(
