Healthy potluck - need a blow your face off recipe

We are having a healthy potluck at my office. Does anyone have something that is simple but tastes so good it makes your tongue want to slap your brains out?

Someone posted this on MFP a long time ago and it has become a staple in my house.
Slow cooked chicken with veggies and pineapple. Serve over brown rice.
Ingredients:
2lbs trimmed chicken breast, cut into large strips
1 large green bell pepper, sliced
1 large red bell pepper, sliced
1 large carrot, sliver cut
1 medium onion, cut into medium size pieces
1/4 cup brown sugar
1/3 cup soy sauce (low sodium)
1 20oz can of sliced pineapple (including juice)
Simply cut up ingredients and combine in slow cooker. Cook 6-8 hours on low. Makes about 7-8 1 cup servings.
Per serving:
Calories: 260
Carbs: 20
Protein: 30
Fat: 4
Fiber: 2
Sugar: 17
Does not include rice.
I use the splenda brown sugar. You can cook it all the night before and throw the cooked brown rice in there before you heat it up again for the pot luck.0 -

I make this a lot. It's lick-the-plate delicious!!
I usually make the beef, and add in veggies (carrots, broccoli, cauliflower, baby corn - and you can add peppers but I don't like 'em) and serve it over some rice.
It's super easy. Slice the beef, toss in some corn starch to coat the pieces. Then go to the sauce. Sautee some chopped garlic cloves in a bit of oil, add in the soy sauce, water and brown sugar, stir. Add in spices. Cook for a few minutes. Transfer to a bowl. Add a bit more oil to the wok, add in beef. Brown. Stir in sauce, cook until beef is done and then you can either cook down the sauce or leave it a bit watery.
So. Frickin. Good.0 -
Rice cooker!( the faster easier sister of the slow cooker)
1/4c wild rice
3c brown rice
low salt vegetable or chicken stock (about 4 cups- rest water)
thin sliced onion
1c each slivered celery ,carrots
1/4c slivered almonds
6 oz frozen salad shrimp
2T olive oil
2 clove minced garlic.
3T hosein sauce
serves 20 = abt 120 cal
assuming you have a big 16-20 c rice pot like I do..
cook until rice pot goes off ...
AHHHHMAZING
at home add 1 lb frozen peas right before serving for more veggies.0 -

Baked Beef and Brown Rice
Ingredients
•1 1/2 cup cooked brown rice
•1 large onion, sliced
•4 medium carrots, grated
•1 small head cauliflower (sliced/chopped)
•1 pound lean ground beef (uncooked)
•1 medium green pepper, diced
•2 teaspoons salt
•2 cups tomato tomato sauce
•2 tablespoons Worcestershire sauce
•1/2 teaspoon dried basil
•1 cup shredded cheese of choice (I used a 4 cheese blend with 80 cals per 1/2 cup)
Directions
•In a greased 13-in. x 9-in. baking dish, layer rice, onion, carrots, cauliflower
beef and green pepper. Sprinkle with salt. Combine the tomato sauce,
Worcestershire sauce and basil; pour over the top. Sprinkle with
cheese. Cover and bake at 350° for about an 1 hours.
I split this up to 5 servings and it came to 376 cals each. I'm sure you could cook the ground beef first and drain to get rid of some of the fat, just lessen the cook time a bit then.0 -

?Portuguese? Sausage kale bean and potato soup
Brown 1 pound or less sausage. Set aside in pot lid. Brown and onions. Drain fat (into the can you keep in the refrigerator for such purposes.) Add 1 pound kale and 8 cups no/light salt chicken broth, 2 cup COOKED or canned, RINSED, beans, and three 2 lady fist size potatoes cup up. Add lots of black pepper, garlic and 1 tablespoon vinegar. Simmer 2 hours. You can drain the broth for convenience in serving it in the office or just eat a cup every day for a week or freeze some.
P.S. to make it healthier add kale and beans to everything. In fact when I make love...0 -

Broccoli rice casserole
1 stick butter
I onion chopped fine
1 8 oz package frozen broccoli
Cook above together till soft
Add 1 can cream of mushroom soup
1 can milk(use soup can to measure)
1 can minute rice
Cook slowly till rice is done ... Doesn't take long
Add 6 oz velveeta .. Mix together and heat all till melted
To make larger amount, 2 cans each of the soup, rice, and milk
I have taken this several times and people always request that I bring this... Enjoy0 -

Cajun spice Chicken with Lentils, Quinoa, roasted veg and Feta:
Mix chicken breasts with cjun spice seasoning and cook in the oven.
Roast whatever vegetables you wish to use in the dish (I used butternut squash, peppers, tomatoes, mushrooms, sweetcorn, courgette)
Cook (separately) some quinoa and puy lentils in veg stock
Once all cooked mix it all together with some feta and spinach.
I normally add balsamic vinegar as a dressing but you can use whatever dressing you wish
This always goes down well at my office!0
