Super easy Microwave banana pudding
Hi everyone, just discovered this recipe while looking for something to have for dessert. It's super easy and quick and pretty healthy (and vegan!) with lots of room for customization
Ingredients--
-one medium banana
- 1 cup unsweetened vanilla almond milk (or whatever milk you prefer)
- 1/2 teaspoon vanilla extract
- your favorite sweetener to taste (I used about a teaspoon of Splenda)
- 1/2 tsp cinnamon
- pinch cloves (optional)
- pinch nutmeg (optional)
Optional mix ins--
- walnuts, almonds, pecans, etc
- other fruits
- stale bread/ dry oatmeal
- peanut butter/ pb2
- chocolate chips/ cocoa powder
- plain or flavored yogurt/ Greek yogurt
- protein powder (haven't tried this one...but it might work)
- whipped cream/ banana slices to top
1. Slice banana into cereal sized bowl. Mash with fork, spoon, etc. (microwaving the banana for thirty seconds first makes this easier)
2. Add the spices, half the almond milk, as well as the vanilla, and sweetener (if desired). Stir.
3 microwave for 1-2 minutes. You may want to stir halfway through.
4. Add remaining almond milk (I do this to help cool it down)
5. Add mix ins if desired
Calories: 160
Carbs: 26
Protein: 2
Fat: 3
(Fairly high carb, but from pretty good sources)

Bump, this sounds interesting. I'd warn against protein powder/err on the side of caution. I've microwaved porridge with it in before and basically ended up with revolting clumpy stuff - I think the heat denatures the protein and makes it coagulate. If you make a shake first and mix it in it could be alright, or even do so after you've microwaved the pudding.0

I already make this for a snack maybe once or twice a week. I haven't tried any of the spices except cinnamon. It gets pretty thick yes but I add less milk maybe 1/3 cup instead of 1/2.0

It does get thick!
The less milk you add and the longer you microwave it, the thicker it will be0 -

I add it to my oatmeal after cooking, and that avoids the nasty clumping.0 -
