What to do with ground beef?

I bought too much. We were going to make tacos but we used some leftover ground chicken instead. I made a cheeseburger casserole today (so delicious), but I'd like more ideas... short of chili, burgers and shepherd's pie, I'm a bit clueless.

Must be easy too... I'm not such a great cook.

    Pasta sauce.
    What's wrong with chili? That can make the meat go a long way, and it freezes well! :)

    I make Korean Beef Bowls - Original recipe called for 1 pound but I had a 20oz package on hand so I used that. This amount of sauce is perfect for 20oz.

    Ingredients
    • 20 oz ground beef
    • ¼ c brown sugar
    • 5 Tbsp soy sauce
    • 1.5 Tbsp sesame oil
    • ¼ tsp crushed red pepper flakes
    • ¼ tsp ground ginger
    • 1 Tbsp minced garlic
    • cooked rice for serving
    • 2 green onions, sliced


    Instructions
    1. In a skillet, brown beef.
    2. In the meantime, in a bowl add brown sugar, soy sauce, sesame oil, red flakes, and ground ginger. Whisk until combined and set aside.
    3. Once meat is cooked add garlic and cook until fragrant, about 1 minute. Drain off any excess grease.
    4. Add the sauce mixture that you set aside to the beef. Allow to simmer for 3 minutes. Serve over cooked rice and garnish with green onion.

    Hamburger stroganoff with low fat sour cream
    Stuffed sweet red peppers with rice, mushrooms, ground beef, garlic, and herbs.
    Stuffed squash or sweet pie pumpkins with the same stuffing.

    This ^^^^ I had the same problem late last week… ground beef was thawed and just didn't know what to do… I HATE meatloaf… (the way my mom made it anyways), but hubby likes it and I've probably only made it.. 3 times in 18 years for him! So I went searching for a new recipe… and this one is sooooo good… the tomatoes, onions and red pepper really make it moist and well, it's a keeper… I'll absolutely be making it again!

    I mix ground beef with:
    garlic
    spring onions
    grated parmesan
    dijon mustard
    cumin
    turmeric
    rosemary
    olive oil
    apple cider vinegar

    and I choose between the following options

    small meatballs that I serve with hummus (homemade of course) and salad
    hachis parmentier (potato puree for hubby and cauliflower puree for me as I am on a low carb diet)

    My family got mad at me when they were eating the same food. As they put it constantly. So my solution: Pinterest. Since then I rarely make the same thing 2x in a month.

    Spanish rice…. to die for.
    1 lb ground beef
    1 cup whole grain white rice
    2 8 oz cans tomato sauce
    2 cans hot H2o
    1 green onion chopped
    1 white onion chopped
    cooking oil

    cook onion/pepper in oil until soft, add gr beef/1 cup raw rice cook until gr beef brown about 10 min, make sure you stir frequently, add 2 cans sauce and 2 cans hot h2O simmer until H2o absorbed. Serve with a veggie. SOOOOO good my kids love this and ask for it all the time.

    Ma Po tofu. Very easy and tasty. Recipe above calls for ground pork, but I usually use beef. If you have tons of meat, make the meat mixture and freeze in serving size batches. Heat up with fresh blanched tofu when serving.

    Lasagna cupcakes are fun. I often use cottage cheese instead of ricotta. I also cut down on cheese calories by only adding Parmesan on top. I tend to skip the mushrooms too.
