chicken thighs-packed lunches

Hello! I have leftover chicken thighs, and a week's worth of lunches to plan to pack ahead. I am getting bored with salads, wraps and the occasional just heating it up with pasta or rice. Anyone have any new and creative ideas for chicken thighs?

DISCLAIMERS:
I don't like avocados
I have access to a microwave and a thermos
I don't have a fridge, but I do have a thermal lunchbox

    yummy cajun food. Cook them with some cajun spices. Serve with red beans, rice & peppers. Or you can put them in a spicy creole sauce and serve that with white rice.

    Edited to say:Crud. Just remembered the no microwave part. Without being able to heat it up I honestly just don't know what else to do besides maybe asian style lettuce wraps?

    Aha! I have it. Shredded bbq sandwiches. Yumminess. Serve with a side a coleslaw.

    -Shred with some BBQ sauce and build quesadilla and heat at work
    -Add to Greek salad with feta and fresh herbs
    -Marinate with mild harissa and mix with cous cous and vegetables
    -Mix with pesto and pasta and bake, reheat at work
    -Make a chicken broth with some bok choi and noodles

    -shredded or chopped mixed with tzatziki sauce or a little mayo and mustard = yummy chicken salad
    -sandwich with a little mayo and tomato and a tiny bit of mustard
    - cooked with a little (trust me) frank's red hot and then mixed with a little ranch dressing on/in rice (might not sound yummy, but it's good! and the ranch cuts the spicy franks - i don't like spicy food either)
    - vermicelli bowl - many recipes online!

    I'm a big fan of shredded chicken whatever, soup, sandwiches, wraps. Since thigh meat is moist, you can reheat it without much loss of tenderness, so you have a lot of options.
