Carrot and coriander soup? it freezes well too
also carrot chips, cut them chunkyish and bake for around 30mins with some salt, pepper and tiny drop of oil.
not sure about the purple ones...never tried them...

I'm a waitress and our kitchen makes a HEAVENLY carrot & ginger soup. I don't have the recipe but I'm sure you can find one online.. Blend the carrots. Yum !!0

I like to shred or julienne the carrots and make slaw out of them with some dried cranberries. It works really well as a side for all kinds of things.0
