Amazing Muffins, Pre/Post Gym!

I wanted something that would be perfect for before/after a work out as I go to the gym pretty early in the morning normally and I thought this muffins would be perfect.

Peanut Butter, Banana and Chocolate Chip Muffins.

Makes 12 muffins although I doubled the recipe so I can freeze some.
Per muffin: 241 Calories, 34 Carbs, 6 Protein, 10 Fat.

2 ripe bananas.
1/4 cup of honey or pure maple syrup.
1/4 cup of brown sugar.
1/2 cup of no fat natural greek yoghurt.
1 large egg.
1/3 cup of unsweetened almond milk.
1/2 cup of creamy peanut butter (I used whole earth organic)
2 tsp of vanilla extract.
1 and 3/4 cups of plain flour
1 tsp of cinnamon.
1 tsp of baking soda.
1 tsp of baking powder.
1/4 teaspoon salt.

Optional - Dark chocolate chips.

Preheat oven to 425F or 220C.

Mash banana and mix with honey, brown sugar, yoghurt, egg and milk. Then add peanut butter and vanilla.

Whisk flour, cinnamon, baking soda and soda, salt and chocolate chips.

Mix together, stirring as little as possible.

Fill the muffin cups to practically the top and bake at 425F (220C) for 5 minutes. Then cook at 350F (180C) for a further 12 minutes or until toothpick or knife comes out clean.

They are so good! I'd definitely recommend them...

    Your recipe looks good, but if you don't mind I have some suggestions to make them healthier. I would substitute whole wheat flour instead of white flour in this recipe, and possibly increase the honey to 1/2 cup and not add the brown sugar. The temperature also seems high, I would bake at 335 degrees if using all honey.

    Thank you. I was planning on using whole wheat flour but didn't have any. I also ran out of honey but the temperature was perfect, nice and soft in the middle :)

    Calorie wise, they are bang on for me for breakfast though which I love :D

    Thanks for the recipe! I love all things peanut butter and banana! I'm going to experiment and try substituting some of the flour for protein powder and using PB2 to save on a few calories.

    Those look really great. I have heard of bakers using apple sauce as a substitute for sugar. Have you tried this.
