I wanted something that would be perfect for before/after a work out as I go to the gym pretty early in the morning normally and I thought this muffins would be perfect.
Peanut Butter, Banana and Chocolate Chip Muffins.
Makes 12 muffins although I doubled the recipe so I can freeze some.
Per muffin: 241 Calories, 34 Carbs, 6 Protein, 10 Fat.
2 ripe bananas.
1/4 cup of honey or pure maple syrup.
1/4 cup of brown sugar.
1/2 cup of no fat natural greek yoghurt.
1 large egg.
1/3 cup of unsweetened almond milk.
1/2 cup of creamy peanut butter (I used whole earth organic)
2 tsp of vanilla extract.
1 and 3/4 cups of plain flour
1 tsp of cinnamon.
1 tsp of baking soda.
1 tsp of baking powder.
1/4 teaspoon salt.
Optional - Dark chocolate chips.
Preheat oven to 425F or 220C.
Mash banana and mix with honey, brown sugar, yoghurt, egg and milk. Then add peanut butter and vanilla.
Whisk flour, cinnamon, baking soda and soda, salt and chocolate chips.
Mix together, stirring as little as possible.
Fill the muffin cups to practically the top and bake at 425F (220C) for 5 minutes. Then cook at 350F (180C) for a further 12 minutes or until toothpick or knife comes out clean.
They are so good! I'd definitely recommend them...

These look super yummy! Do you know what the calorie/fat content of an individual muffin is? :-)0
-
I've just added that into the post! Silly me, forgot to include that vital piece of information!0

Your recipe looks good, but if you don't mind I have some suggestions to make them healthier. I would substitute whole wheat flour instead of white flour in this recipe, and possibly increase the honey to 1/2 cup and not add the brown sugar. The temperature also seems high, I would bake at 335 degrees if using all honey.0

Sounds yummy! Will try!0

Following to try later!0

Thank you. I was planning on using whole wheat flour but didn't have any. I also ran out of honey but the temperature was perfect, nice and soft in the middle
Calorie wise, they are bang on for me for breakfast though which I love0 -

Thanks for the recipe! I love all things peanut butter and banana! I'm going to experiment and try substituting some of the flour for protein powder and using PB2 to save on a few calories.0

I ate one this morning after working out pretty hard at the gym and it was perfect. I was concerned that I would still be hungry but it was filling and held my over for a couple of hours.0

Why do people assume that honey is healthier than sugar? It is simply a different form of sugar.0

I'm aware of that and never suggested that honey was 'healthier' than sugar. I added sugar too but the honey adds to the flavour and the texture of the muffins.0 -
Sorry. I was in a hurry, and I'm just so used to seeing people using honey as the "healthier" alternative, that I guess I just saw it that way.0

Just made these and they came out great! One thing I'll throw out there is with Jif Peanut Butter ours came in at 333 calories and we didn't use the chocolate morsels. If you can find a lower cal pb, the nutrition will be much better.
We came in at 333 Calories, 11 Protein, 20 Cholesterol, 550 Sodium, 17 Fat, 38 Carbs.0
