Oatmeal Protein Pancakes (Weekend special)

I give you my all time favorite pancake recipe. Healthy, clean and satisfying.
First you will need to soak 3/4 cup oatmeal with 3/4 cup almond milk for 10 minutes.
Then in a bowl, add:
1/4 c flour
1/4 c protein powder
1/4 c coconut flour
11/2 tsp baking powder
1 tsp cinnamon
1 tsp flax seed
1/2 tsp salt
1 tbsp cane sugar
then mix in the soaked oats and add
3/4 c more almond milk + 2 TBSP
1 large egg or (2 egg whites)
3 tbsp apple sauce
(You can add blueberry or chocolatechips)
Add olive oil or butter or even coconut oil to the pan and pour in 1/3 cup or 1/4 cup of the batter into the pan and cook like normal pancakes.
*TOPPINGS:
Maple Syrup, honey, jam or nutbutters
Pecans, almond slices or any nuts and seeds of choice
Strawberries, blueberries, blackberries and banana or other fruits of choice.

I've done this without soaking the oatmeal before...it still gets a pretty good texture during cooking.
