Sweet potaoe ftitta

1-Grate onion and sweet potatoe into a bowl
2- Add paprika and 2 eggs
3-Mix together and form round flat peices
4-fry in olive oil and wham bam thank you mam there you have a simple,tasty fritta to go on its own or as a side.

    But for those not used to sweet potatoes...
    The easiest way to make them (tried so many ways)

    Cut them in cubes or pieces (1 to 1.5 inches), mix with little bit of olive oil,paprika and others spices you like (not required)
    preheat at 400...put on an oven steel plate for 40-45 min.... they'll be perfect.
    bit crispy outside,soft inside.

    my kids love them that way!

    my husband makes something similar for breakfasts using real potatoes, so I don't see why not. He typically adds 1-2 Tbsp of all purpose flour, don't know that it's necessary though. (he's not particularly into eating with a calorie goal in mind, I'll say that)

    This is a great way to eat them. I have a roasted veggie seasoning that I shake on before I bake them. Yummo!

    This is a great way to eat them. I have a roasted veggie seasoning that I shake on before I bake them. Yummo!
