Healthy dinner ideas for my parents
My parents are visiting me this weekend and I want to cook a nice dinner for them tomorrow night. We all love proper British food (by which I mean loads of butter, carbs and general stodge) but I want to steer clear of that and cook them something impressive but heathly.
It will need to be something I can cook after work, I have about 2 hours to play with, and for 4 people. It also needs to be filling enough for my Dad who has a somewhat 'hearty appetite' Oh and I am not a big fan of fish (unless smoked). I am quite a good cook but do need a recipie to follow as I am not creative enough to make something up!
Does anyone have any ideas?

Hi. This is a Jamie Oliver recipe which is fast, tasty and not stodgy

You could serve this with baked sweet potato wedges and normal potato wedges too
You could also look on the website Skinnytaste.com . There are great recipes on it and any I have tried are really tasty.
