Simple recipes using chickpeas?

Hi,

Does anyone have any simple recipes using chickpeas that the really like? I'm not looking to do anything overly involved, so simplicity would be appreciated.

    I make hummus out of them and eat it bell peppers.

    Chickpea curry. Fry onions, add minced garlic and curry powder to taste and fry briefly, then add cooked chickpeas and stock or tinned tomatoes. Bubble for a while. If you want, thicken with cornflour/water paste or ground almonds, or give it a few pulses with a hand blender to mush some of the chickpeas, which will also thicken it.

    This is mini-Catt's favourite meal. For her birthday she asked for roast chicken and chickpea curry - I thought it was a random request, but actually it was a darn good dinner! We had yellow rice with it as well (boiled rice with turmeric)

    I sometimes use them in place of tuna to make a "tuna salad".... basically cook them and mash them up (but not to the consistency of hummus, leave it a little chunky) and then treat it like you would a tuna (or chicken) salad... I use a little light mayo, seasonings, tomato, pickle, etc. Just something different.

    I also really like chickpeas in indian food. I'll cook them with zucchini and carrots and some sort of curry or masala sauce packet.

    Made this for dinner this week and it is delicious. If you divide it into 4 servings instead of 6 and reduce the oil to 40 grams instead of 5 tablespoons, you can turn it into a filling main dish for only 350 or so calories a serving. It keeps well too, if you like cooking ahead.

    Drain and mash them with a fork, then mix in chopped onion and celery (however much you want), a half cup of mayonnaise, a splash of lemon juice, and LOTS of dill. So, so good. Spread on some bread...mmm. Excellent. I toss in a chopped bell pepper sometimes, too -- also delish.

    I love them stir-fried with steamed kale, olive oil and lots of garlic. Delicious and healthy!

    I had this for lunch yesterday and thought it was tasty:

    1/2 cup cooked chickpeas
    1/2 cup cooked pearl barley
    1/2 cup frozen corn (heated for 1 minute in the microwave in 1 cup of water, then drained)
    1/4 cup salsa

    Mixed and topped on some fresh baby spinach. Add seasoning as desired.

    You could add any other grain or skip the grain portion altogether if you're so inclined. Fiddle with the ratios. Adding corn and salsa to any legume is pretty much a win every time for me and it's so quick to put together if you have cooked beans just hanging out in your fridge.

    I usually like to boil them and eat them as a salad. I usually put 120 gr chickpeas, cherry tomatoes, diced parmesan cheese, seasoned with olive oil, lemon juice and pepper. Sometimes I even add some boiled spelt.

    This may be more involved than you want, but it makes a lot and is really good. I also top lettuce salads with them. I saw a recipe yesterday for chickpea tacos. That would be good and easy also.

    I like to make brown rice, throw a can of chickpeas in, some frozen chopped spinach (or fresh if i have it), some garlic, and chicken. LOADED with protein :)

    I sometimes add a can of chickpeas to my "beans dishes" -- chickpeas, kidney beans, black beans (any kinds of beans), fire roasted diced tomatoes, red onion, green peppers, and frozen corn. Makes a lot to eat as a side dish or main dish throughout the week!

    I am going to try this Roasted Cauliflower + Chickpeas with Dijon Vinaigrette recipe on Saturday – and I am adding some blanched green beans for a little crunch and to boost the veggies. It certainly looks delicious in the pictures!

    Sorry if this isnt simple enough, but it is DELICIOUS and it was a big hit when i made it for friends last week:

    Falafel pie

    Put 1 can of rinsed chickpeas in a blender/processer with 1/2 red onion, 1.5 tbsp olive oil, fresh parsley and cilantro if you have it, fresh or powdered garlic, salt and pepper. Blend, add 2 tbsp whole wheat flour, blend. Pat the mixture into a pie pan, bake at 375 for 20 minutes. Let cool. fill with hummus, top with whatever you like! i did mixed spring greens, cucumbers, olives, tomatoes, and a yogurt sauce (greek yogurt, lemon, garlic, and diced cucumbers with water squeezed out and put in processor). cut into it like a pie and serve: DELICIOUS! With some grilled chicken it would be a protein and fiber packed healthy meal victory! :)

    Chicken, chickpea, spinach and tomato curry...

    Dice up some chicken breast and cook through, lightly fry some onions, add a can of chopped tomatoes, chickpeas, your spices (curry powder.garam masala, chilli, etc) and then add loads of spinach which wilts away. Simmer for 20 mins then serve with a dollop of greek yoghurt and brown rice. Yum!

    *I just recently modified this to blitzing the spinach in the food processor first then adding it to the tomatoes and the rest. Adding the yoghurt to the sauce as its cooking makes it look and taste like a proper curry!

    Yup this is a good one. I don't bother with stock or tinned tomatoes but I do add some frozen spinach and fresh coriander if I have it. Yum.

    Also you can add sweet potato or squash which kind of mushes into the sauce.

    That one is really good and really easy to keep it low cost with using seasonal vegetables. It is completely changeable too, you can add meats and stuff. And the original recipe is vegan.

    Lots of ideas here that I do. two others that are yummy are:

    Chickpea salad - rinse a can of chickpeas, add a diced onion, 2 diced tomatoes, a cup or more of chopped parsley, make a dressing from fresh lemon juice, a bit of zest, a grated clove of garlic, a pinch of salt and I use some splenda. Depending on your calorie req and love of sour you might want to add a bit of oil (I generally don't but I really like tart tastes). This is excellent on it's own, also great with a can of tuna or as a side for other meals. yummy.

    I also often make cauliflower, sweet potato and chickpea curry. I but up cauliflower and sweet potatoes into small pieces and roast in the oven at 425) while the cauliflower and sweet potato roasts I sauté one or two onions and two cloves of garlic, once they are soft I'll add some Pataks Vindaloo spice and maybe some Indian Mango sauce (just a bit) with a can of tomatoes. then I take the sweet potato and cauliflower out of the oven, add to the sauce and simmer for a bit. So delicious!
