Do you have a favorite homemade broccoli cheese soup recipe?
I'm making homemade chicken brother after my roasted chicken dinner tonight, and I'd like to use my homemade chicken brother and food processor to make my first homemade broccoli cheese soup.
Please suggestions!

Even better with 2oz. blue cheese instead of 4oz. cheddar. If you want a smoother soup, cook the vegetables for longer and add a zucchini (a.k.a. courgette).

I used this basic instruction & ingredients for the soup. I tried to access this link from home and it said “Page Not Found” but I found it by Googling “Broccoli Cheese Soup 5 ingredient.”
I made mine a Paleo version with ingredients I had on hand.
1 cup of onion (110g of Onion on the food scale and logged into MFP recipe calculator)
2 cups chopped broccoli (200g of broccoli on the food scale and logged into MFP recipe calculator)
3 cups home-made chicken broth (I’m sure store bough works fine, but I make it so…)
2 cups half & half (this varied from the recipe that used canned milk. I buy half & half in bulk for my coffee and had it on hand. I might try the recipe later their way because it was a bit dense in calories)
8oz block Extra Sharp Cheddar Cheese (Aldi, friendly farms, hand shredded)
Very amounts small fresh ground pepper and salt
There was one detail I picked up elsewhere that I added to the recipe. When the soup was done, I scooped out about three cups of it and placed it in my food processor for a few spins, then added that back to the soup. This thickened the soup without adding nasty flour because I’m allergic to wheat. Mmm kay.
I was really surprised how easy it was. I did make sure to remove my soup from heat before adding the cheese, but it melted nicely while I stirred, no curdling!
This soup came out to right at 5 cups as per my big Pyrex thing. It was 1175 grams as per my food scale, so each serving is 1 cup or 235 grams.
Per serving here is the nutrition:
Calories: 337
Carbs: 8
Fat: 25
Protein: 18
Sodium: 364
Fiber: 1
I did add this to the MFP data base, not sure if you can actually see it or not.0 -
My boyfriend ranked this 9 out of 10 and I love it.
I miss creamy soups like this as a Paleo Person because all the canned & restaurants contain flour.0
