Homemade Soup

I find homemade chicken soup very low in calories yet very tasty and filling. There are no real quantities except that I literally chuck in raw chicken (on the bone), whole garlic, fresh ginger chunks, coriander, bay leaves, basil, few black peppercorns and a pinch of salt in a pan of boiling water. Bring to the boil, simmer down, cover and leave on the lowest heat setting for about 3 hours.

Obviously the calories will be higher if you eat the chicken as well, but if you just drink the soup with perhaps a few of the shreds of chicken, its only 30-50 calories per cup. I had two cups of soup for lunch, and some of the chicken and soup for supper.

Go low on the salt, as that's what marks this recipe out from supermarket soup.

    Sounds like you need more calories in your diet if this is lunch and dinner :/

    Yes a 36 yr old male needs a lot more food and a lot more nutrients than this. Losing weight very low calorie is not a good idea.

    Sounds interesting, I wonder what it would taste like without chicken altogether. Im a vegetarian and want to try this.

    It sounds good. Add some veggies like shredded cabbage, green beans or tomatoes and beans and a whole grain like barley or quinoa and you will have a very healthy delicious meal.
