transitioning from eating too little to eating cal goal..

Hello everyone,
So, I never have had a problem with working out. I really enjoy it and after going through P90X3, I feel stronger than ever and am really motivated to get into the best shape of my life (& if it matters, I could stand to lose 20-30lbs)
BUT, although I've gotten stronger, I haven't slimmed down nearly as much as I feel I should've and after being super stubborn about tracking (I think because I was worried I'd see I was eating too much and I wouldn't know WTF to cut out bc I've cut out a lot already), I finally started logging and..
SURPRISE! NOT EATING ENOUGH!
was probably taking in about 1000cal and burning 300-500cal during workouts, and I'm also very active at my job..
Now I'm trying to eat more, slowly but surely - but I'm pretty paranoid I'll end up gaining weight because my metabolism is messed up..anyone have experience with this sort of transition?

Best thing, imo, is not to dump all those extra cals in at once.
First week, add 100 cals.
Second week, add another 100 cals.
Etc, etc.0 -

Yeah, that's pretty much what I've been doing, not really intentionally, but it's been a day to day process trying to figure out what'll be enough for the day
I'm definitely feeling better overall, so there's that..just hoping I don't suddenly gain a lot of weight0 -
In between snacking can help too, even if it's just to slowly transition. Nothing bing, maybe get a few 100 calorie snack packs, munch on it throughout the day?0
