Anyone have a good banana muffin recipe?

One that won't bust my diet, please. I have a couple of very ripe bananas I need to use. Thanks!

    Almost any muffin recipe will work, just use a banana and substitute unsweetened applesauce for the oil, and cut the sugar by a 4th. I do it all the time.

    These are really low cal, I used to make them all the time but naturally got lazy. I haven't made them for a while now but had them constantly when I was losing weight (in maintenance now). My parents nag me to make them constantly and they're huge non-diet friendly people and love them lolz. Of course you can play around with the recipe however you like this is just my variation.

    Makes: ~18 muffins (depends on pan-size etc)

    2 cups whole wheat flour
    2 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    2 cups mashed bananas (around 4 average)
    2 tbsp sweetener (or 1/2 cup sugar)
    4 egg whites (or 2 large eggs)
    1 tsp vanilla extract
    1/2 cup unsweetened applesauce
    + optionally any other fruit you want (1 cup blueberries or 1 cup strawberries, etc.)

    1. Preheat oven to 350 degrees F. Grease muffin pan/paper muffin cups.
    2. Combine dry ingredients: whole wheat flour, baking powder, baking soda and salt in a medium bowl
    3. Combine wet ingredients: banana, sugar/sweetener, egg/egg whites, and vanilla extract in separate bowl. Blend until mixed, then add apple sauce. Mix again. If adding fruit, fold in now.
    4. Slowly combine dry mixture to wet mixture. Blend well. (*if the batter is too dry, add milk. i usually use water)
    5. Scoop the batter into pan/cups. Bake 15-20 minutes (check with toothpick, when batter stops sticking take them out)
    6. Let cool before serving and EAT!

    (Estimated, varies with brands/substitutions etc. Can use online calculator to get a better result)

    I usually store them in my fridge, they taste yummy when cold or you can nuke them before serving again. Oh and ps I can never only eat one, usually have to have at least 3 in one sitting. Also have no clue how long they last, they were usually gone in 1-3 days.
