Lunch Ideas?

I'm in need of some lunch ideas. Quick and easy ideas. I was thinking of the Atkins meals. I'm on day program 3x a week so I have to bring my lunch.

I like open faced sandwiches, a veggie and a fruit.
Tuna salads.
Omlets.
Soup.
Any combo of starch, protein, and veggie. Rice, beans and broccoli. Lunch meat wrapped around cheese, sugar snap peas, and crackers. Etc.0 -
Chili is always good make big pot and take little everyday. Also lunchmeat rollups with cheese and peppers0

Can you be a bit more specific? Do you have access to a refrigerator and microwave? What foods do you like or dislike? Any particualr macros you're watching? (If you say Atkins meals does that mean you're keeping a limit on your carbs?)0

what's macros? yes to the carbs. I do have access to a micowave.0 -
Macros - the percentages of carbs, proteins and fats that you're aiming for.
So if you're looking to keep carbs low then a sandwich or filled roll is probably not great. I like to batch cook a big pot of soup/ stew at the weekends, using up whatever veg I have in the fridge, and maybe add a tin of beans for extra protein. I freeze this in individual portions.
I've seen low-carb breakfast muffins - basically eggs baked in a ham "bowl". They'd make a nice portable lunch too.0 -
Make a salad the night before with chicken breast, tuna or beans. I like mixing romaine lettuce, chicory, baby plum tomatoes, cucumber, radish, julienned carrot. You can also add in seeds or nuts. As a dressing, use 1 tsp oil, about 100ml of tangerine juice, 2sp vinegar, poppy seeds and salt/pepper to season. That will give you enough dressing for a whole week of salads.0

I cook a batch of beans about once a week and then nuke a potato in the microwave in the mornings for lunch most days. I add a teaspoon of oil over this. Don't forget to first stab the tater a few times with a fork or knife to prevent explosions during microwaving
Next week I'll do hard boiled eggs and refried beans in a tortilla wrap. I'm still working on my sauce/dressing. I'd like to use a tablespoon of Italian spiced up with red pepper and whatever I can think of0
