my grilled chicken kabobs 500 calories for 6

1 lb of red beets peeled n quartered
2 large carrots peeled n 1/4 cut on diag 2 inch
3/4 cups of balsamic vinaigrette dressing
3 tbs of honey
1/4 cup of mayo
6 boneless skinless chicken thighs
2 red bell peppers cut 2 inch pieces
grill med high .....place beets in microwavein bowl covered 6 mins remove put carrots in same bowl covered 3 mins ....mix dressing n honey well remove 1/4 cup and mix with mayo ....toss chicken with remaining mix.....thread each tight with 2 skewers thread beets carrots peppers on another skewer alternating ........chicken n veg 15 mins turning n brushing all skewers with remaing mixture for the last 5 mins

    I love kabobs...but not a fan of mayo. i think with the balsamic dressing I could probably just leave that out. thanks for posting!!!
