Not losing any weight - Help would be swell.

Hey there, my name is Will.
I am an 18 year old. I weigh 141lbs and my height is 5'6". I am not looking for major weight loss as I am a healthy weight, I merely wish to shred some fat on belly, love handles et cetera.
For 6 days a week I will exercise on my exercise bike and travel a distance between 9miles and 12miles (The former being the bare minimum) This equates to 500calories for the 9miles and around 700calories for the 12miles. During the day I will also go on the trampoline several times for at least 10minutes.
I do not calorie count. For breakfast I eat a cereal such as weetabix, for lunch a Tuna/ham/cheese sandwich with white bread, and for dinner it is usually meat orientated (beef, potatoes, carrots etc) I drink a lot of icy water. At least 6 litres a day. (I do not force myself to drink it, I rather enjoy icy water and have always drank a lot. I do not snack in between and I have completely cut out junk food and sodas (I haven't had a soda for months)
The only problem is I am not losing any weight. I have kept this up for over a month. In the first week or so I noticed I had dropped from 64kg to 61kg. I was very happy with this and thought everything was dandy, I then had to miss out on two days of exercise on my exercise bike. My weight then went back up to 64kg (for the two days I had struck strictly to my diet and hadn't ate any 'rubbish') Fast forward several weeks and I am still the same weight. I definitely feel muscle building up in my legs due to having a high resistance on my exercise bike, but I doubt I am putting on very much muscle from cardio alone. People just say I am not noticing any weight difference because I am putting on muscle, yet I doubt I am in some sort of equilibrium, every time I lose a pound of fat I gain a pound of muscle (for example)
I just wonder why I am seeing no weight loss when I stick to such a strict exercising and dieting regime. Surely, with over a month of exercise (which equates to around 12000calories burned as an estimate) drinking a lot of water, and eating a rather clean diet, I would have lost some weight now. Any help would be greatly appreciated.

    As you are really not overweight, this is probably not enough. If you want to drop a few pounds, you will have to count your calories to make sure you are eating an an appropriate deficit to do that. If you want to TONE rather than lose weight, probably add some interval training (workout videos) or weights to your regime.

    I agree with the previous poster. When you are a healthy weight to begin with you will be the most successful if you track your calories. Also, lifting weights will help your physique. There are some beginners weight lifting books (Starting Strength, New Rules of Lifting) which are good for beginners. I was doing cardio for ages but people really started noticing results when I switched to lifting.

    Thank you very much, I know you gave me examples of some books, but would you be able to give me a quick lifting workout I can do?(If it isn't too much to ask)

    Unfortunately, unless you are counting calories and can give us an accurate representation of your diet, there isn't much advice I can give you.

    So I would suggest tracking your calories accurately and with a food scale for a month or two, then coming back to reask your questions if you are still not happy with your weigh loss.
