Spices in Indian food
Spices are a key to Indian curries, they are used extensively to enhance flavor, taste & they have health benefits too. The spices that I use in my general cooking are:
1. Turmeric - All curries & sauted vegetables.
2. Ajwain - In sauted vegetables, it tastes great with pumpkin
3. Coriander seeds - sauted vegetable, specially in bhindi (lady finger)
4. garam masala - curries, paneer & tofu curries specially.
5. hing (asafetida) - in pulsel & dal
These were some quick ones that came to my mind.

Gonna have to see if I can find the ajwain, garam masala, and hing. Do you have a good lowfat recipe for chicken curry? The last recipe I had used tons of heavy cream.0
