1 leek.....cut root shave top.......cut in half wash fill bowl with water chop leek but in water
1/4 cup of water
2tsp of olive oil
1 lb chopped kale stems removed
1/2 cup of veg broth.........low salt
1/2 cup of sour cream
1/2 tsp of mustard or dijon either one
salt n pepper pinch of each..........in large skillet med heat.....oil add leeks cook 4 mins....add kale add water n broth till boiling lower heat n simmer n cover 5 mins until kale wilts drain 2/3 of liquid from skillet return skillet to heat add sour cream n mustard stir to blend and salt n pepper...........enjoy
