Hello everyone,
Just looking for a nice haddock or cod fish recipe that's rich in goodness as I am cooking for family this sunday, just let me knoe the recipe and how many it serves please

Baked Cod:
Dip your cod fillets in egg whites. Then toss with a mix of breadcrumbs/cornmeal, seasoning salt, lemon pepper, garlic powder, a little paprika. Cook in a skillet with a little oil till golden brown and the bake in the oven 5-6 minutes (350 degrees) till barely cooked through. Serve with a risotto and glazed baby carrots. Pair with White Zinfandel.
Lemon Cod:
Put your codfish in a baking pan. Season with salt and pepper. Place pieces of butter on the fish. Cover the fish with the slices of lemon. Add about 1/3C water and bake 10 minutes at 350 degrees till JUST cooked through. Garnish with orange slices (like wheels) Serve with atop a bed of butter and parsley noodles. Goes well with roasted baby vegetables. Pair with a White Rhone Blend Wine.

Crunchy Topped Fish with potatoe sticks
2 medium baking potatoes (12 oz total) cut into 3x1/2x1/2 sticks
2 teaspoons olive oil
garlic salt
Toss potatoes in bowl with the oil and salt .
Arrange in single layer on half of a parchament lined baking sheet. Bake at 425 for 10 min.
4 (4oz) cod fillets
2 T. melted margarine
3/4 cup panko bread crumbs, or cracker crumbs, or stuffing mix crushed
Thaw fish if frozen. Place frozen fillets in bowl and cover with 1/2 water and 1/2 milk. Do this early in day
or will not be thawed.
Mix margarine and crumbs together.
Remove fillets from water & milk mixture. Pat dry and then salt fillets.
Place fillets on opposite half of parchment and top with margarine crumb topping.
Return baking sheet to oven and bake until fish turns white and flakes easily with fork and the potatoes are tender.
Serves 4-- 346 cal per serving
I have done this with fish only but do not have calorie count. Have used a variety of fish- walleye, cod, tilapia. Very Yummy!0
