Man, I just throw mine in the microwave and cook til soft, then scoop them out of the skin into a bowl, add salt and fresh grated nutmeg (that part is important! Get a nutmeg grater if you love sweet potatoes, acorn or butternut squash!) Then I just mash it all up.
No butter, no sugar, no nothing else, and it's delicious.
ETA: When I'm feeling really adventurous, I'll fry up a piece of bacon and crumble it into the mashed sweet potatoes, and add just a little of the bacon grease. YUM!0 -
This doesn't seem right.
What size are the sweet potatoes? According to the USDA database, 1 cup (200 g) of sweet potato has 180 calories. Usually one potato will = at least one cup, yet you have 4 plus other ingredients totaling to 164 calories per serving (1 potato per serving).

I would hope it's just mistakes and not truly random. I mean what is the point? Once someone tries his recipe and enters the ingredients in MFP they'll know it was wrong.0 -

^ There is no way you could possibly come up with 174 cals unless you're just making things up. The eggs alone assuming large and not jumbo would be 140 cals and over an oz of cream cheese per serving is 100 cals or so0 -

I guess I don't understand why you think this is off.. He did not specify the size of the sweet potatoes so I don't think this was something he did intentionally. I believe in giving someone the benefit of the doubt. I have tried his recipes and still losing so incredibly incredibly happy...waiting for more Jim..0 -
Ignore the critics and thank you for posting me a sweet potato recipe..I will have no problem calculating the ingredients depending upon the size I use and dividing by four servings, big deal! Thank you, keep posting!0

Well, that is why I asked about the size of the sweet potatoes. An average sized potato would have more calories than listed without any additional ingredients.
I, too, would like to hear more from the OP (again, why I asked). The weight of the potatoes used would be helpful.0
