Low-carb, high protein lunch

If you're like me, you have a hard time meeting your daily protein requirements. So here's what I had for lunch today. It's delicious and nutritious. :happy:

Open a can or pouch of chunk light tuna and mix together cut up carrots & pickles (sandwich pickles), diced peppers, bits of lettuce, and mayo (if you like). Wash a medium size red bell pepper and cut off the top. Fill the pepper with your delicious tuna salad and enjoy!! Great way to enjoy tuna without a sandwich!

  • It is very yummy!! I also forgot to say that sometimes I add some shredded mozarella cheese. With cheese, it's probably around 220 calories. I used sunkist chunk light tuna 5 oz canned. I personally don't like mayo so I don't use it, but adding mayo would also up the calories...I call it 'tuna in a pepper delite!' LOL.
